You are so right, there are so MANY people telling us how to make this and that and its not always the correct way, YOU KNOW YOUR STUFF I follow your advice and constantly go to your website on how to do ANY of the fermenting things, I make milk kefir ( my fav) Kombucha and now water kefir. I feel so much better! My daughter who is special needs and has taken antibiotics and seizure meds for years her system had to be messed up, she cannot tell me if she is not doing well, I give this to her now, MIlk Kefir and whey and she is back to smiling and happy! The only thing I have ever done is add kefir milk and whey! I want to add water kefir now to help her.
I love your teaching and make kefir and kombucha because of your videos. However i feel like actually watching you in person helped me to get the process so much better than just listening. Thanks for the info!

Hi, Donna. Thanks for your podcasts and videos. Am I correct in thinking that kefir soda made from milk kefir whey will have more probiotic benefit (the “good bugs”) than using kefir water crystals?

Can you use fruit juice from concentrate? I got the Knudsen glass bottles of juice but it says it contains 100% juice and that it’s from concentrate.
If there s no additives it probably works 👍
Other conciderations may be:
-if its made from a concentrate, what was the water added back to it..? If thats chlorinated (ie tap water) it might kill the microbes
-if its not made with organic produce it could contain pesticide recidue which could hinder the fermentation process

I've been making water kefir for about 2 months now and I don't know where I'm going wrong 😢 I use organic raw cane sugar and coconut sugar. How do I prevent alcohol forming? At the beginning it was fine and now it's tasting like an alcoholic beverage
Hi Myria, Make sure you are using a cloth and rubber band during your 1st ferment. Many tell you to use a lid. But with a high sugar ferment like water kefir or kombucha this will just make alcohol. You should only use a cloth and rubber band for the 1st ferment stage. Also I wouldn't use coconut sugar. It can be hard on the grains. I find it easier to fallow when I see the person talking.
Half cup fresh kefir whey in a 16 ounce bottle with juice and water and sit out for 3 to 5 days.
Half cup of fruit juice.
Is it. Away to elamate some or the alcohol and some of the sugar mostly the alcohol

I have never had any issues with milk kefir.
I have tried water kefir 3 or 4 times over the years and have never been able to keep them alive or get well fermented bubbly soda from them. It always teasted off and flat or sweet and like it didn't ferment at all. They never multiplied like my milk kefir do.
I think I will try the kefir soda method with the whey. Makes more sense since I like to make kefir cheese anyways and has more probiotics. But I feel like you didn't say how to make the soda with whey? Maybe I missed it?
My grandmother nearly had what she called "a "kinniption" when (age 9) I ordered a hamburger deluxe for dinner because that was NOT a dinner. 😂
i would like to make the soda with fresh juice .. is this possible ?
Hi Cindy, I highly recommend using store bough juice. This is because fresh juice has added enzymes and can be harder to predict and become overly fizzy and not as flavorful when making kefir soda. Fermentation will greatly reduce the sugars in the juice and you'll really love it. You can use more fresh fruit or honey with kombucha as you only need a small amount to do a 2nd ferment. But with the kefir soda you need a larger amount of juice so using fresh juice or fresh fruit would be too much.
How do i make water Kefir from scratch? I mean SCRATCH! Ive been trying to find a video of it, but they all require existing cultures. Any help is much appreciated.
