This looks like a great healthy base recipe that could be easily adapted and the ingredients are easy to keep on hand. We like to use ground pork for Asian and ground turkey with warm fall spices too. Great addition to my menu rotation. Thanks!
I made your soup yesterday and I loved it! I roasted the squash with rosemary and thyme salt and pepper. Added the pumpkin and the apple. I added a handful of chopped onion and curry powder and cream and it was DELICIOUS 😋 I never would have thought to add 🍏. I can't wait to make this as well!
That looks like a delicious and uplifting recipe Laura. I'm not sure about the mint, but mixed in with all the other herbs and spices I would try it to see what kind of taste combination it makes.

The leaves are all turning yellow and orange where I am in Canada. Nice time to take a walk. The stir fry looks delicious
