How to Cook Bacon So It's Crispy, Tender, and the Most Perfect Ever

    Didn't think frying bacon could get any better? We prove it can.
    Here’s a simple way how to make bacon that’s crisp and tender instead of dry and crumbly. Make crispy bacon with no risk of overcooking. Bacon cooked in water? It works!
    Place the bacon (in strips or cut into pieces) and just enough water to cover it in a skillet over high heat. When the water reaches a boil, lower the heat to medium. Once all of the water has simmered away, turn down the heat to medium-low and continue cooking until the bacon is crisp and well browned. When we tried this method, the meat plumped up as it cooked instead of shriveling, leaving the bacon pleasantly crisp yet moist, not tough or brittle.
    The addition of water keeps the initial cooking temperature low and gentle, so the meat retains its moisture and stays tender. By the time the water reaches its boiling point (212 degrees), the bacon fat is almost completely rendered, so you’re also much less likely to burn the meat while waiting for the fat to cook off.

      Just cooked mine in a cast iron skillet and use a cast iron bacon press to keep flat. Delicious from first piece to the last. Key: don't remove the rendered fat between batches.

    This works great. It does take longer, but you just start it before you start mixing up your pancake mix or whatever elaborate breakfast you are making anyway. Like all good cooking, it is about the timing (it is similar to, and takes about as long as boiling the water for pasta or potatoes). This is for a weekend breakfast/brunch. I also tried it with quite a bit less water and it seemed to work fine in less time. This is for people that like to cook. Enjoy the process...

      Pro tio: use a skillet big enough to lay the bacon completely flat before adding water.. or cut the bacon to fit yours if you don't have one.

    I don’t understand all the negative feedback and often from people who haven’t tried it. We should encourage people who go to see the trouble of making such videos often just to help other people. If we put them down they are not motivated to do them.     I followed this method for a few years after seeing this video. I definitely liked the result -- the bacon gets cooked more evenly than with normal pan-frying. But it took forever to cook an entire package of bacon this way. I've now switched to baking on parchment paper, and I don't miss this method at all.

      @@jakethedog4397 This is how I cook mine as well. Bacon on a sheet pan lined with parchment paper. Place in cold oven, set heat to 400 F, thin bacon about 12 minutes, thick bacon closer to 20. Or do a quick search for the bacon method.

      I put a wire rack over the parchment paper and do it in the oven 200C (400F) for 15-20 minutes depending on thickness

    Alternatively, use the pan lid and add only enough water to form steam. This will still help distribute the temperature a lot and you'll get more even cooking in lots of kinds of "dry" foods.

    I just did this bacon, and the result is that: a) Yes you spend more time cooking it and b) It does not matter, the bacon was so perfect I almost couldn't comprehend it with my human brain. The texture, the flavor, the fat and the meat were on the whole bacon, and I just need to tell you that your life will not be the same if you try it.

    You can do this by starting with a cold pan and simply cooking the bacon over Med-Low heat.. same result, 1/3 of the time

      Personally I use medium-high heat. But the main thing is not to use too high heat, the more heat the faster it burns and you want it to get crispy over time and not instant (burnt). It should take about 5 min in a hot pan (medium to high) to get it nice and crispy. If your own settings goes from 1 to 9, 6 to 6+ should be enough. Just remember to have some butter in the pan when you start (about 25 grams)

    I once scoffed at this method... but I finally tried it this morning and the bacon was PERFECTION. Crisp, evenly cooked, and still juicy with a pleasing chew. It was, without a doubt, the best bacon I ever cooked (my usual method is just med heat in a pan until browned). However, this method also took about 20 minutes, instead of the usual 6-8 minutes. I think next time I'll experiment by just cooking it on med-low without water from the beginning to see if the water makes a difference or if it's just the long, low cooking.

      hawaiidispenser How did you get on with method? I would anticipate the moisture evaporating cooking on low, and without water. Bacon hitting high heat should keep in the moisture. Did you find it was dry?

    Bake it on a cookie sheet (with edges to hold the oil) lined with parchment paper. Flip half-way through cooking. Comes out evenly cooked and each piece lays perfectly flat.

    I just set it on a medium low heat so it slowly cooks while I'm making coffee or prepping other foods. I keep it constantly low and it turns out beautifully. Doesn't take long, either. I think the main mistake people make is impatience which makes them turn the heat up too high. I know the sweet spot on the temp dial for a particular burner, half way between really low and medium for my stove, put a splatter screen on top and only turn it a few times. Easy peasy.

    This does work (I’m not a cook by any stretch of the imagination) and my bacon turned out exactly the way I wanted. It does indeed take longer so I’ll by trialling some of the suggestions in the comments, but if you want to avoid bacon that turns into brittle strips, this is a reliable method.

      @@beewise3193 In the restaurant I worked we had a high end convection oven ($10,000) that cooked everything like a dream. At home a conventional oven works fine, you just want to dial it to where the bacon comes out slightly undercooked because the carryover will take it to absolute perfection without making it too crispy 👌. Try 375° F for idk 10-12 minutes and make adjustments to find the perfect bacon. Good quality thick cut bacon is also a game changer here. People seem to think bacon is unhealthy. It’s only unhealthy if you get low quality stuff because it will most always have nitrates as a preservative. Once you buy high quality bacon you can’t go back because it’s really that much better (look in crowdcow.com or butcherbox.com etc.) Also with the oven method you don’t have to flip the bacon while cooking.

    I have never heard of this method. Currently I am using an air fryer. But this looks like it doesn't cook away too much of the bacon.

    The best result is to start with a cold pan and keep it on low heat. It takes longer but perfect results. Flat, crispy, chewy, and fat rendered. Also boiling the grease in water makes it weird to reuse it. This way you have a pan full of awesome liquefied bacon fat and ideal stripps

    Or you can boil the kettle (1 min) while the pan heats up and make a cuppa at the same time. Whisk 4 eggs to make French toast as the bacon cooks then use the leftover bacon fat to cook the toast in the pan to give it a crossover bacon flavor. Use the left over eggs to make a small omlette while you cut some tomatoes in half and let them cook while you make your cuppa. Time taken to make breakfast: 5-10 min.

    I add a couple of Knorr beef stockpots to the bacon and finish the cooking with a little Olivoil. You can do too - its really that simple - or not, it's your choice.......

    I dont know what you do with bacon in the USA but in Australia ( back me up UK !) we are talkin about Minnimum 2 eggs a few mushrooms, a sausage or 2 , a tomato and maybe even some black or white pudding and thsts before you throw on toast and beans....IN THAT PAN!!! 😊 ( not in soup)

    It takes about 10 minutes to "render" fat. You fry it at a medium heat turning occasionally until the fat is rendered. It makes a pop sound and turns more of white then browns the longer you cook. It's rendered as soon as it all pops. It really isn't hard. If you use to high of a heat it burns the meat before it renders the fat. Simply cook on a medium heat.

      @@SimonWoodburyForget I like to flip and as long as there is enough oil/butter in the pan there should he no contact issue. Snip your bacon fat it then dosnt curl up and all stays touching the pan and oil. If you really want to get fancy they figured it out years and years ago. They invented the frying iron. Simply an iron like utensil that you place on top of the bacon or whatever your cooking and it holds it down. The beauty if them is they heat up and cook from both sides. No need to fix ehat is not broken my friend. 😘

      @@SimonWoodburyForget the best way to cook bacon without work is to place on a baking tray generous oil or butter coating and simple overnight cook. This gives a uniform finish most of the time. You can fit more in. It's just generally done in restaurants etc for big batches it's not quite the same as frying. Deep frying would destroy the smoked flavour and is simply wrong in my opinion.

    Or you could put thick-sliced Wright’s (or similar good quality bacon) on a rack on a sheet pan or just directly on the pan, slide it into a cold oven set to 400*, and remove it after 17 or so minutes. Perfect every time, no splattering mess, and you can do other stuff more conveniently while it’s cooking than any stovetop method. I’ve done it this way with the water in a skillet, it’s really good but no better. If you use a rack in the oven, it’s also better for you.

    I bake my bacon on a tin foil lined sheet pan. I eyeball the cooking process looking to partly cook one side then turning the bacon over to cook other side until desired crispiness. This method works very.well. It avoids standing over a pan waiting for the bacon to cook and easy cleanup as well. Oh Yea..save those drippings!

      I've never cooked bacon using this water method, but I've always cooked it long and slow.
      No splattering fat over the stove and I like the texture better.
      I simply don't make it when I'm in a hurry. Just like I don't make pot roast for dinner when I'm in a hurry.
      Sometimes I'll cook the bacon a day ahead. It warms up quickly in a pan.

    Pan fry on a lower heat, and turn often. It comes out just fine. It only gets black and irregular when you try to cook on a higher heat and don't watch it. The lower heat works just fine for me.

    I pre-cook my bacon a pound at a time. Keep it in the fridge till needed. Heat it in skillet on medium low heat. This takes just a few minutes, and it turns out GREAT. Saves time in the morning as your rushing out the door.

    I usually do the oven method, but had one extra slice today that didn't fit on my pans, so I decided to try this new method that I saw on Facebook this week. The process took a LONG time. While this slice cooked, I cooked the rest of the pound and a batch of chocolate cookies! I'm very glad that I only used one slice, not a whole pound. It was crispy and chewy at the same time, but it lost all of its bacon flavor….the saltiness was completely boiled away. Usually I think ATK has some great ideas, but they struck out this time! If you decide to try it, cook only one slice, or you might be sad.

      @@rashida7777 Sounds like you use the broiler. Make a foil tin/shallow up-turned edges, bake @400° for 20 minutes, place baked slices on a paper towel to absorb excess rendered fat, & serve. No splatter, no mess, just let rendered fat cool & throw foil/paper towels in the trash.

      @@SimonWoodburyForget I use parchment for easy cleanup. Don’t need bacon fat for my blt or avocado Sammy Never had smoke in my oven not once or splatter. Use a high sided pan if worried and pour a little water to start. All restaurants use the oven too.

      @@SimonWoodburyForget Santa is actually correct. He did not give a wall of text like you but everything you said is actually wrong. Oven baking bacon on sheet pans is the least messy, most efficient way to cook bacon, it doesn’t matter if it’s a convection oven or traditional oven. 350-375 for 30-45 minutes allows you to get the rest of the meal done while baking. It doesn’t matter if you use parchment or silpats or aluminum. Bacon cooked in an oven cooks consistently and evenly and requires minimum attention. I’ve been cooking professionally for almost 25 years and I’ve never been inside a professional restaurant that would prefer pan fried bacon over baked.

    I do my bacon on an aluminum baking sheet on the middle rack of the oven turned on HIGH broil. Turn the bacon once. Take it out when it reached your desired crispiness. Does not make a mess of your oven.

    My way is easier. Line a jellyroll pan with foil or parchment. Place the slices of bacon on top. Bake at 400 degrees F for about 10-15 minutes, until meat is crispy and fat has been rendered. Place on paper towel and blot excess fat. As a bonus, strain and keep the bacon fat in the jellyroll pan to fry with.

      I have read a few times that one should never use aluminium foil in close proximity to food, especially if heat is involved, as it may cause Altzheimers. So I have banned it from my kitchen. Parchment paper is ok

For years I heard that you should drink 8 glasses of water a day, only to read the other day that it is completely senseless as the water will just pass through your system and that 2 glasses a day is sufficient

    It must take much longer. So then why not just fry it on abit lower heat. Then you dont risk it being burnt, and you dont have to wait for all the water to evaporate

    For similar results, we cook our bacon on a special microwave bacon cooking tray.
    It cooks the bacon perfectly, quickly, easily, drains the fat, can hold up to 7 slices at once, and is mess free.

      why not? When the water evaporates, the fat is left behind, as it evaporates way slower at the temperatures that water boils at.
      If anything, it's even better for collecting bacon grease, since you don't risk that much burning the grease while waitin for it to render out.

      I tried it and it tasted like washed bacon, plus it stuck to the pan and I had to shovel it off.
