This Aloo Gobi ki sabji is from the Dhaba Task from my MasterChef Journey! I had cooked this Aloo Gobi recipe as a part of the food we were cooking for 50 truck drivers at a Dhaba. And the Aloo Gobi recipe won us great appreciation from Akshay Kumar!
The trick to making this Aloo Gobi ki sabji is in frying the potatoes and cauliflower before adding them to the masala. This gives the Aloo Gobi it’s texture and taste too!

Aloo Gobi
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 3-4
Ingredients:
4 large potatoes
1 large cauliflower
2 onions, sliced
2 tomatoes, sliced
1 tsp cumin seeds
1 tsp Kasuri methi
1 tbsp ginger green chili paste
1 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala powder
Coriander leaves
Oil as required
Salt to taste
Method:
Peel the potatoes and cut into long pieces. Cut the cauliflower into florets.
Heat 2” oil in a pan. fry the potatoes in medium hot oil in batches. Remove when golden.
Fry the gobi florets and remove.
Heat 3 tbs oil in a pan. add the cumin seeds and then the sliced onions. Sauté till lightly colored. Add the ginger green chili paste and sauté till fragrant. Add the powdered spices, salt to taste, followed by the tomatoes and cook for 2 minutes. Add the fried potatoes and cauliflower and toss well. Add crushed kasuri methi and mix. Top with chopped coriander leaves and serve.

Ma am can this vegetable be prepared without deep frying the potatoes and cauliflower.
we do not add onions in gobhi ki sabji
My recipe
Take oil
Add chili
add matar
then add smalll cube sof potato
Add salt and turmeric (simmer untill potato is cooked)
then add boiled gobhi and tomatoes
sprinkle chili powder and dhaniya powder, and cover it for 2 to 3 minutes (without mixing)
after three minutes, mix them all gently and keep it again on simmer for few minutes
when every thing seems cooked add a pinch of black pepper powder,
garnish with coriander or lemon juice (optional)
enjoy.

I add Edamame to my aloo-gobi just to increase the protein content.
Plus, I cook my aloo-gobi in the oven with olive oil & some salt & I then make the veggie.
