「地球」。自然観への料理、美しいが、何というか無機物のような何か明々しさをあえて欠けさせ、生への起伏を促すようなふくよかさを感じさせる。

自然より着想を得たという料理。
シェフの美意識の根底にあるものも「風、山、川」という自然であるというが、私はその盛り付けに「自然」を感じられない。むしろ、無機質で冷たい、作為的な、人工物を見ているようである。
