Two things to consider:
1) only the outside layer of the omelette was hot since the heat was stored in the inside layer which was cut open and presented inside out. Assuming the rice was probably at room temperature by the time it was set up, biting cold and the outer partial layer of piping heat caused by the steam trapped inside the omlette, isn't as bad as it looks.
2) You can coat your mouth with a layer of water/saliva, best works with cold water, and have quite hot food as it's served.
Long time ago i had a frnd like u who used to give this type of informations.

There’s a reason I enjoy and respect Japanese dishes and it’s simply cause of how delicious and super fancy they’re presented. For people wondering how he’s eating it while it’s steaming hot: he’s a chef. Most chef’s develop a small tolerance to heat over the years, and it’s called iron hands/mouth. My grandad was a chef for around 40 years and can basically pull metal lids off boiling pots without even flinching.
Ive only been cooking a few years and also using a dynavap, and i accidently dipped my finger into hot oil the other day and didnt even feel it
