    Wow! Great harvest and I wish I had a cellar like yours.
    Here in Melbourne Australia we can grow potatoes year-round. (Different varieties and in the shade over the hot months)
    We only have a normal suburban block but still manage to grow a lot of food.

    A good way to use green and damaged potatoes is to extract the starch - wash them, peel if you like then chop them up and put them in liquidiser with a lot of water. Pour the resulting 'cream' through a sieve (to remove the fibre) into a glass bowl or jug. In a few minutes all the pure white heavy starch will sink to the bottom. When the liquid above has mostly cleared, pour it off and you should be left with pure white starch. Spread the starch out on a tray to dry, store it in jars. It makes a great egg substitute for vegan baking; can be used for anything where you might otherwise use cornstarch. (The poison from the green bits is washed away with the water.)

    Dehydrated some of the excess. Peel, shred and blanche them and layer them singly in a dehydrator or in a low oven with a cracked open door. Store them in jars with a silicone pack. They'll keep for years.

    I have been lucky to never have diseases in my potatoes. Only problems were mice and an incidental colorado beetle.. Grown from supermarket potatoes as well as from growcenter potatoes. can't say I saw much difference (other than price)

    Oh no! Why don't think they are rotting!! I saved my own potatoes and is was a fail! I understand what you mean I hope you feel better

    If you're looking for a new boyfriend I'm available (but don't tell the wife), I'm 72 not good looking or wealthy but do have a nice beer belly. I really do like potatoes though so bear that in mind before you rush to a conclusion.
