Part of the experience of reading Dungeon Meshi, as it came out, was the shock at how well everything some how naturally got crazier. All without having to increase power levels or similar and while also maintaining the core themes. The shock was always, "This is crazy." Followed by, "This also makes complete sense."
The reason almost nobody eats monsters in the setting is it's a taboo, like how some cultures have "unclean" animals that they're not supposed to eat culturally IRL.
plus marcille says episode 1 that there were people who did try for the same cost cutting reasons but they all ended up with terrible food poisoning and spewing chunks from both ends or whatever, so without someone like senshi with his knowledge of whats safe to eat and how to safely prepare and cook them, its pretty difficult to go that route even if u want to

Your enthusiasm makes me want to rewatch it. I was completely caught off guard by how good it is, I started at "eh this might be okay" and by the end it's one of my favorite anime. It's such a good fantasy story and the animation is beautiful, and it's legit funny as hell.
You clearly don't understand details of the story (your confusion about Falin) and your biggest mistake is calling Chilchuck normal. He is half-foot. Tall-men name of "baseline" humans in this world, if they saw you they would call you Tall-men. It is not a spoiler but by number of manga chapters second season should easily reach end of the story.
