Oh heck yeah! I have never heard of shellbows before but, now I know. Also I just found that a "cawfee cup" is a measuring device used for cooking😂. Thanks for sharing.
Sure is 😂😂 I’m enjoying some “cawfee tawk” this morning 😉 shellbows are my little guys favorite! Well not so little he’s 9 and he LOVES going to the yearly Italian festival and getting his shellbows from the Delallo food stand!

Now that looks awesome, I've always added butter and usually a little sugar to pasta sauce because any I've bought seems to be missing something.

You know the secrets!! Those little mozzarella balls are always on hand here, one of the things I added to Todd’s famous Toddelloni which I named on the fly for him at the Griddle Tour when he didn’t have a name for his delicious dish!

With “caw-fee”, methinks you’re a “nee-ew yaw-kuh”… am I caw-rect? 😁… brings me back to my roots as a joisey boy hearing from the other side of the river over the Hudson…. I think, once I use up all my preshredded mozzarella, gotta find a decent multi shredder box to shred my own… I might try those small cheese balls in the water… forgot what you called them.. have to rewatch anyway. Pause-n-cook, or write EVERY step down. Either way…. What about a little ricotta (or “riggutt” in the NY/NJ “Sicilian” slang)?

Not sure acidic tomato sauce on a raw steel griddle is a good idea.
That was always my hesitation!! For years I’ve said the same BUT with a PROPER seasoned griddle it’s absolutely fine! This is the one time I clean with water immediately after & hit with our conditioner. Thirty seconds extra clean up but worth it!
