The model shown in this video is relatively simple he just makes a low poly version base of the model then sculpts the model and bakes the texture and high poly on to the low poly but I think he over did it because it looks kind of rough at the end

verts are vertices, they are the points that make up a model, they link up to create faces, which are essentially just squares, and those squares form to create the model

You using blender?
Definitely never use the actual sphere for you're starting base like this. You can take a cube, right click, subdivide, smoothness 1, add a few subdivs from the bottom left panel, bam sphere and much less polygons. Also, the middle area continuitng to go to a center point on the sphere they used adds nothing for the actual mesh normal shading for roblox.

You'll also need to normal map it if you use that many triangles
