Homemade All-purpose Spicy Chili Oil Recipe

- ▶ Recipe Ingredients ~
For the chili mixture~
• ¼ cup Asian Red Chili Flakes (You may also use regular red chili flakes)
• 2 tbsp Gochugaru (Sub: coarsely ground "seeded" dried red chiles)
• ½ tbsp Soy Sauce
• 1 tsp Salt
• 1 tsp Sugar
For the oil infusion ~
• 1 ½ cups of Sunflower Oil (Divided, or any type of neutral oil recommended)
• 4-5 cloves Garlic (Minced)
• 1 piece Ginger (About 1-inch piece, minced)
• 3 nos Star Anise
• 1 piece Cinnamon (A thick piece)
• 2 nos Black Cardamom
• 2 nos Bay Leaves
• 1 tsp White Peppercorns
• 1 tsp Black Peppercorns
Directions ~
Assembling the chili mixture ~
• Combine the Asian red chili flakes, Gochugaru, soy sauce, salt and sugar.
• Mix well and set aside.
Preparing the oil infusion ~
• Heat ¾ - 1 cup of oil in a saucepan (medium heat)
• When the oil is heated, add garlic and ginger along with the rest of the remaining whole spices
• Let the spices saute and release their flavor to the oil over medium-low heat
• Once the garlic and ginger start to turn slightly golden brown, add another ¼ cup of oil
• Mix and let the spices saute for another few seconds
Preparing the chili oil ~
• Strain the hot oil carefully to the prepared chili mixture through a fine mesh strainer and discard the spices
• Mix well until thoroughly combined
• Let the chili oil cool down completely
• Enjoy!
• Store in an air-tight jar and refrigerate for several months.
