- Beef Hump... no, that's not my nickname! It's the best piece of beef I've ever had! Like fatty brisket on steroids. Heavily marbled, rich with beefy flavor and incredibly simple to cook!

I seasoned it up so it was covered and smothered and cooked it on my weber kettle over jealous devil charcoal and mequite wood chunks. It's a hearty cut that holds up well to heavy smoke. I spritzed with water as to not alter the flavor but keep it moist. I lost track of times a bit but I believe I put it on at 10, pulled it off at 4, and then sliced at 6. I've done it both shredded and sliced now but IMO the texture of the sliced is a little better. Both ways are amazing though!

There is a channel called Food City that's capitalizing off your videos. I started following them at first but when I went to check for more shorts and videos, there was a mix of yours and another guy's who can't compare. They are getting way more views than you and that's not right. I thought it seemed weird so I decided to search your name that you mentioned in your video and that's how I found you. Tons of people are subscribing to that channel because of your videos... They keep saying it in the comments... They like your personality, style, and recipes. You need to start putting text across your screen or something... I'm pissed about this for you... Sorry for writing a book put I thought you should know.

100% try out an untrimmed tri-tip. Just cut the hanging bits off and smoke it like a brisket and make sure you have the fat cap.
I love me some tri-tip... it’s king out here in California. Although I smoked it like a brisket once and while it was tasty, I prefer them medium-rare. Maybe I’ll give it another shot though!
@@chucksflavortrain for best results I use Mustard as a binder and home mixed garlic pepper. The fat cap is the key to keeping it moist, though. Without that it's still good but not amazing.
