Japanese would be considered the dub version since this is an American production. So the English voices are the original. It was originally a labor of love by Monty Oum who passed away several years back. Rooster Teeth continued the series using Monty Oum's story road map. If you start from the beginning, you'll notice that the first 3 volumes look very pixely. The first three were created using Poser so there's a lot of washed out coloring and the only thing animated were the fight scenes while the rest of the movement and actions were mostly Motion Capture. When volume 4 production hit, they switched over to Maya while using the 3D software pluggin called "Pencil" in order to render the 3D models to have the appearance of cel-shading or give it a close-to-2D appearance like anime.. And with Maya they were able to capture 3 zone for lighting which were Lit, Shadow and Rim lighting. This is all explained in their Behind-The-Scenes on the Rooster Teeth website. But as others suggested, start with the originally promoted Trailers" Red Trailer, White Trailer, Black Trailer and Yellow Trailer. Red, White, Black and Yellow represent the 4-girl team so they are the ensemble main characters. The character's names represent their colors. Red - Ruby Rose (She alludes to the fairy tail = Little Red Riding Hood and in her first trailer she ends up fighting a wolf Grimm) White - Weiss Shnee (In German her name literally means White Snow as Weiss is a take on Snow White) Black - Blake Belladonna (Blake's name means Black and her fairy tail alludes to Beauty and the Beast. She represents both the Beauty in this as well as the Beast) Yellow - Yang XiaoLong (Ruby's older sister from the paternal side - their father. Yang alludes to the fairy tail of Goldilocks and the Three Bears and her Chinese name [阳小龙] is literally translated to "Little Dragon of the Sun." Though "Yang" by itself means = Sun/Positive energy/Loud which goes with her personality at least in the first 3 volumes )
Oh also just something you may want to keep in mind, until the most recent three volumes (seasons), the main cast has been under 18, and Ruby herself still is

So those three were already 18 and adults by the time of the time skip (V4-V5)At least according to Kerry. And 18 in the US is when you're legally an adult. But yes, Ruby is close to an adult, though she's currently 17. She won't turn 18 until the end of this month. Halloween is technically her birthday.
Mate, if you’re interested in watching a few more fight scenes to see if they’ll kick up your interest for the show, I’d always recommend Watts Vs Ironwood from Volume 7 first, It’s a fight that’s pretty light on spoilers and really shows off the shows ability to play with its environment during fights, A must watch! Of course, the choice is completely up to you!

Studio Shaft also did a co-production 2D anime with Rooster Teeth called RWBY Ice Queendom, which is a side story, alternate retelling of events set between the 1st and 2nd volumes of RWBY. It was originally done in Japanese then dubbed into English.

It's animated, but.... according to the creator (RIP), it's not anime. It takes inspiration from different sources, including anime, but it is not anime. However, this show is so popular, there was a non canon sidestory anime made. Also, it's not dubbed in English. English was the original VA language used.
