    If I was ever forced to be a vegetarian, I could perfectly well manage eating grilled aubergine with Asian seasoning. It is better than meat (and from a carnivore, that is saying a lot!).
    I've marinaded and grilled a few aubergines and the texture and flavour are just awesome.

    I love grilled veggies but I’ve never prepared Aubergines (eggplants) this way, going too try this recipe next time I fire 🔥up my grill, thank you again Jeremy and Lee!

    Lee or Jeremy: Will the Aubergine get mushy or will it's form hold up? I seem to always end up with mush and that is a texture I generally don't care for. How would one keep this from turning into mush? Thank you.

    I *always* find mine extremely bitter. Other than adding loads of sugar or sucrose, how would you recommend keeping out the bitterness?

      It's in the cooking process mainly, aubergines will retain that bitter flavour if it's undercooked! The marinade also really helps - Lee

      Jeremy recommends 200 degrees Celcius for 30 minutes! Just make sure to preheat the oven first! - Lee

      @@asha6343 brilliant I was just thinking about this. But how to sear in oven?? I have gas flame and I got a thingy Sahil from @headbangerskitchen used - metal grill with wood handle. Maybe I can try that, foil on bottom of the aubergine for a few minutes??...............
