Lemon Poppy Cupcakes | The Perfect Cupcake Recipe

The best cupcake recipe. This lemon dessert is so dang good. The cream cheese frosting is by far my favorite part of it all.

INGREDIENTS LIST:
1 tbsp + 2 tsp poppy seeds
1 cup or 200 g all purpose flour (spooned and leveled)
1/4 tsp baking soda
1/4 tsp baking powder
1/2 tsp sea salt
1 cup + 1/8 cup or 213 g dark brown sugar
zest from 2 medium sized lemons
3 oz. or 88 mL neutral tasting oil (6 tbsp)
3 large room temp eggs
1/2 cup or 150 g plain nonfat greek yogurt
1 tbsp freshly squeezed lemon juice
1 tbsp vanilla extract
1 tbsp toasted poppy seeds (used from earlier in the recipe)
Frosting
1 stick or 113 g room temp unsalted butter
zest from 2 medium lemons
4 cups or454 g powdered sugar
1 tsp lemon extract
8 oz. or 227 g cream cheese (full fat/room temp)
2 tsp toasted poppy seeds (used from earlier in the recipe)
Salt to taste
Flaky sea salt
Oven temp 320 F or 160 C
Bake time 20 to 25 mins

Lol that's funny. They're totally worth the effort. You can easily break the recipe up into two days. Make the cupcakes one day then make the frosting the next day. This way it doesn't feel like as much work. Also thank you!
