Try deconstructing the stew...prepare the mushrooms separate...sauteeing in butter, garlic, herbs and set aside. Sear the marinated beef and add to a beef broth/jus with other aromatics (onions, carrots, herbs) wine or marsala and cook on the stove top until reduced half way. Because you can marry the flavors of the sauteed mushrooms and the beef stew together at the end, I construct the dish by adding the mushrooms to a bowl first and ladling the stew over it.
