TIP OF THE DAY when you cut out your biscuits no matter if you use a biscuit cutter or glass once you cut through the dough never twist the cutter from side to side in a twisting motion because the twisting seals the dough and you don't as much rise in the biscuit. Years ago, I went to Greenfield Village, Michigan, Henry Ford's outdoor demonstration of what historic American village life would have looked like. We included a stop at their restaurant that served sandwiches on sourdough bread. The sandwiches came with a story about homeless men carrying a bit of sourdough in their pockets as they "rode the rails" looking for work during the Great Depression. Their meal would be cooked in a tin can over a fire in the gravel next to the railroad tracks. Then the empty can would be used to bake the sourdough, buried next to the fire. The Greenfield Village bread had ridges as if it had been baked in a can. Food always tastes better when we know the history.
Yes I’d say those receive the “Stokes stamp of approval” for great biscuits. Two 👍 👍! Ms Phyllis would be proud. They look great. Ms Phyllis’ motto was “if you have an ugly biscuit you know it’s going to be light fluffy and delicious; if it’s a pretty biscuits it’s going to be a gummy biscuit.” .
I don't know what Mrs Ritter looks like so I don't know if Nathan looks any like her or not but he favors you alot tremendously. I've never seen biscuits made this way b4. They look amazing.
