    50g cashew nuts
    10g yeast flakes
    50ml oil from sundried tomatoes [see below]
    2 tbsp brine [see below]

    100g green olives finely sliced [reserve 30ml brine]
    Small bag vegan parmesan
    Kale crispies
    25 g kale see above
    Tbsp yeast flakes
    Tbsp oil
    Good pinch salt

    Method

    Firstly, wash the kale under cold running water and strim it from its stalks. Add the tomatoes and olives, warm through and serve garnished with the crispies and the parmesan, This dish holds well and microwaves easily. If you wish to eat it straight away, warm the sauce over a low heat and stir in the pasta, tomatoes and olives. Divide between serving dishes and top with the crispies and the parmesan

    This looks amazing. I'm definitely going to give this a go, and maybe add some cannellini beans to bump up the protein!

      Good idea, cannellini beans would work well with it.
