First Greeks make gyros from pork (neck) or chicken and i never saw anywhere they are mix it, they keep it separate and if someone want mixed then mix from two different gyros directly in pita bread. About spice this mix of spice i would say is combination of classic and add some things that are not usual but sound good and i am sure it taste very well, would add lemon juice what are missing from classic set of spice for gyros. Good point in this version of gyros is that he left meat to rest what is crucial for getting gyros well.

We use a serrated knife with small fine teeth, which cuts the meat easier. We tried an electric knife but this chews the meat. The hand knife has better control.
Thanks for watching, the gyros is placed on the spit on the top level of the spit for an hour and then brought down to the lowest level, the first cut is about an hour later to get the crust off. Cut every 15 to 20 mins after that.

This is a 9 inch aluminium pulley and I got it from a pulley store. You can do an internet search for pulley store near your area. I have videos on the spit itself please check them out.
food poising does not occur from having 2 different raw meats its when one is contaminated and then touches the other 2 pieces of clean meat touching is fine especially just prior to cooking

i was not able to find lamb gyros during my time in greece and i went to many places. it was all pork. i'm glad to see this video and the use of lamb.
a lot of people overdo it with the coals, Nick did not use many here at all and the gyro came up trumps. Thats experience.
