I'm a cheapo and got the Kit. Came with 40 Filterpapers and a Server. The Filter is a Size 2. The Server fits 800ml and it works totally fine with 48g of Coffee. Brewed this much a Number of Times now and can't complain. It is pretty full, but I thought, when it came with a Server this size, it will have to brew enough to fill it up all the way, and it worked for me flawlessly. But a bit confirmation is always good. Actually the Server is also labeled Size 2...
You bet. I do that all the time! The 01 is basically the lower ~2/3 of the 02, so I find that they work identically if you use the same amount of coffee and water. Can even swap filters between them, as long as you pour carefully.
Some of the pour over techniques are easier for the smaller brewer with smaller portions as the spout can get closer to the coffee for a more gentle pour. But besides that I fully agree and often brew in both a size 1 or 2 for 30g coffee/500g water and the result are pretty much the same. I have a size 3 that I only use for very rare occasions with more guest so it is not a size I would recommend for most use cases
I have a Hario V60 02 and a Bonavita Melitta Size 4 drippers. The maximum load of the V60 02 is 22g of coffee to 350g of water. More then that, the coffee taste is not that good because the brew time is increased. When I use 30g of coffee, I use the Bonavita Size 4 to 500g of water.
I am an espresso person so maybe it's a stupid question, but if want to make 2 cups I need to grind different than when I want to make 1 cup, right ? Like in espresso
That's a good question. In most conical brewers (like the V60) I'll grind a tiny bit coarser when doubling the batch size. Just 1-2 clicks on most grinders. It _seems_ unnecessary on most flat-bottom brewers. On my Fellow Stagg, for instance, I keep the same grind size, period. As always, it's worth experimenting both ways!
I just ordered a 2 and was wondering if I should have ordered a 1.
But now I know I made the right decision.

There is also a #3 that comfortably makes 800ml/@27 oz. Just double the 02 recipe.

Yep. It's too short, of course, but the angles/contours are identical.

I haven't tried, but I assume it would work just fine.
The 01 is definitely better when brewing with under 25-30 grams of coffee.
