    There is an abundance of Papayas in my garden and I am always thinking of new ways to use them.
    Fermenting them by making Green Papaya Kimchi is one good way to preserve them. Green Papaya is very high in living enzymes.
    I include papayas every day into each of my meals! Besides eating it fresh from the tree,one of my favourite ways to use Papaya

    If you do not have green papayas where you live, then you can make this Kimchi by using local food of your area.
    You could use carrots, pumpkin or raddish!

    So this is a kimchi to be comsumed quickly, right? I understand 1 day after the final process and then it goes into the fridge, how long it can be stored in the fridge?
