  • Chana puri are salted mauritian fritters stuffed with split peas(my way)
    Accompanied with a coriander or tomato chutney
    For about fifteen Fritters
    250g of flour,
    About 1 cup of warm water,
    1½ teaspoon of instant yeast,
    1 teaspoon of salt,
    1 teaspoon of sugar
    For the stuffing:
    100g split peas, salt,
    1 teaspoon of turmeric,
    1 teaspoon of curry powder,
    1 chopped onion,
    1 tablespoon coriander
    oil or ghee
    For the chutney
    1 large tomato,
    3 chillis
    ½ onion,
    coriander and fresh mint
    2 garlic cloves
    salt
    Mix and serve with chana puri
    Mix flour ,sugar ,salt and water
    And make homogeneous sticky dough.
    Leave it to proof 1 hour
    Soak the split peas for 1 h
    Drain and
    Put them in a pot add water, turmeric and salt
    Cook until tender.
    Drain and Grind it ,
    In a pan put oil or ghee add onion
    Garlic , turmeric and curry powder and combine .
    Add the mixed split peas.
    Season it and add some coriander.
    Make small balls and coat them with the batter.
    Deep fry on a low heat.
    Notes: if you find that the stuffing is too dry add a little water but we should be able to form the balls with
    Proofing time : 1 hour
