You skipped the part showing how a zig zag stroke can divide following that new path. There was a cross-fade @18:00 where the path for the stroke moved in between from straight to following the zig zag. Can you please show that adjustment.
Not sure if you've since found the solution, but you need to select the zig zag line, then go to Object > Expand Appearance in order for it to remain. Took me an hour to find that solution.
