    Gaggia Classic does not have to beat the Rocket to beat it. All it need do is be equal or close. At 1/4 the price, that beats the Rocket (unless you’re looking for prestige or something). As already mentioned, a dimmer mod does the trick…. and can be done on plenty of machines that are less than $100 on the used market.

    Gaggiuino mod totally transforms Gaggia, absolutely worth the effort and way less expense then any other machine for home usage

    I'm going to add Gaggiuino to my GCP. I may not be able to pump out lattes quickly, but I think the quality will definitely be there.

    I have a newer Gaggia Classic Pro, adding a PID to it completely transforms it, also I always gently purge the steam wand into a spare cup to get rid of the water before steaming and bring the wand right out the front so it can naturally sit in the spout of the pitcher and be tilted

      The steam wand on the classic pro certainly looks better than the one I installed here 😆. I do wish they had a fully articulating one, though. Feels a bit lazy for an otherwise very capable machine.

      @@DavidLikesCoffee I have a Classic Pro and, for me, the steam wand was the weakest point of the machine. A dinky little swivel only thing that I could never get into a good position. I hacked in a Silvia item into my machine. A lot better, but a little too long for the low height of the Gaggia. I will also endorse @CCPhotography's comment about adding a PID, it makes pulling good shots a breeze.

    I had my Gaggia Classic completely rebuilt with new parts, & added the new steam wand that’s on the new pro model,
    Total was about £250,
    Best money I ever spent, & the steam wand is awesome👍

    I always thought to temp surf for dark roast it is 10secs after the brew light comes back ON = about 91°C!

    I own a gaggia classic pro i love my coffee machine! Probably on the future i will update to a Rocket but only for 2 reasons, the look like of the machine and better temperature control at the end of the day. My coffee machine is my happy place at home

    You forgot that Classic Pro has also improved headset, a bit different gasket and shower that improves temp stability during water flow.

      The shower and gasket are no different that I know, but it does come set to 9 bar in north America.

    I've had a Gaggia Classic v1 for more than ten years, heavliy modded (PID, steam wand, shower and shower plate, basket, opv etc). Two months ago I upgraded to a Lelit Mara X. The Gaggia is not a bad machine in any way, it's just that the Lelit beats it on every single point except maybe warmup time. YMMV, but for me it was totally worth the extra $$$.

    Guy doesn't know what he's doing, the light on the Gaggia turns OFF when the thermostat is working, combined with the unnecessary purge you just lowered the temperature unnecessarily

    I like your edit about the Classic Pro at about the 2-minute mark. I just bought an old "Gaggia Espresso" for $100.00 (mine was built back in 1995) and installed the Classics "pressure release" stuff. A new boiler, group, solenoid, discharge tube, etc. was shy of $125.00. So it now works like a Classic for less than $250. I still need to update the steam wand, but the machine works just like a Classic. I'm waiting for an adapter (from Shades of Coffee) for the pressure transducer needed with the "Gaggiuino" because I don't want to use the "T" tap method. I did the "Gaggiuino mod" on my old Delonghi Dedica. It was a fun project, but it has now been disassembled to use on the Gaggia Espresso.

      A great price. I've just paid £300 for my 2005 Classic, though it does have the opv, pid, upgraded group head etc. already installed

    Do you not temp surf or do much of an extended flush on your Rocket? I'm usually flushing around 400ml to get down to ~205, from the ~212 resting temp. I've also dialed back my pressurestat and have lowered the opv to probably around 7 bar. How do you judge temp on your rocket? If I did a quick flush like you demo'ed, id probably be UP to 214, but im close to sea level.

      I’ll usually let it heat for about 20-30 minutes and then flush until there’s no steam. I have the pressure stat around 1.5bar and opv at 6.bar Usually am running light roasts but I admit I don’t monitor the temp that closely.

      @@DavidLikesCoffee Thanks for the Response David, nice to speak to you btw. if you had to guess, what's your shot temp at the grouphead, sounds like 205+ to squeeze what you can out of your light roasts? I have a grouphead thermometer and go back and forth about adding flow control, but feel with the HX knowing the temp is pretty critical, personally. But it sounds like you've got a system that works.
      And can you name drop a couple roasters you look to for light roasts? Only ask since being in America, roast level kind of depends on the roasters style more than a standard across the country.

      205+ sounds right. I have a pressure gauge on the group currently but may swap it out in the future for a thermometer. I’ve been loving Passenger in Lancaster, PA lately. Some other good local ones for me are Ceremony, Vent, Black Acres, and Little Amps.

      @@DavidLikesCoffee haha really? I'm ~80 miles east of Passenger and they've easily been my favorite roaster this year. I got a deal on a bunch of Vibrant (a close 2nd), so I'm a little low currently on Passenger, but I've got some Agargo and Montecarlos Pacamara on hand. I'm a huge fan of their regular Monte, and had a really good run at their Brundi Mikuba Honey Process with was exceptionally clean and flavorful. Enjoyed their Edward Ossa Gesha as well. Which have you tried and enjoyed?

      Always a fan of Agaro, Cusco and Heza. I also really enjoyed the Gesha Village Dry process earlier this year but wasn’t brave enough to pull shots with the 100g I had of it 😂
