Fabric sails weren't replaced with bricks. It's just that the sets you exemplified are Creator 3-in-1 where they prefer to use bricks because they can have other applications in the alternate models.
The shooting feature was removed from the canon because of a lawsuit against another toy company where that company was found liable when someone shot a missile into another person's throat and they died (or something like that) so toy companies across the board removed firing missiles from their toys at the time to avoid the liability. It came back because the laws changed and the risk of lawsuits went away.

When I was a kid, I was sent to kindercare in my local area. We had a few buckets of lego with tons of different pieces. So many of these older legos were in it and it reminds me a lot of actually playing and building with some of these. They were old by the time I played with them but it was cool.
Floppy skeleton was my favourite figure. I lost it one day and I don't even know where. I loved it dearly. Also, I remember all of the old versions you shown, I was very surprised and it gave me a small feeling of nostalgia. Thank you for this cool video
I remember the ‘Dynamite Tile’, i also remember the Chrome weapons…i remember thinking they looked really nice…but the paint DID peel. If only they could prevent this from happening and bring the chrome weapons back.
100% agree about the OG Chewbacca. The face just looks more like the real thing from the movies. Also same for OG Yoda but when used for original trilogy sets. The current Yoda is good for prequel stuff but not OT stuff
The classic monkeys were one of my favourite things as a kid. :D As for the cars, I'd like to point out that once minifigs were around, the cars were 4 studs wide, then in 2007 they became 6 wide (at the wheel base), and trucks were 7-8 wide at the wheels, now the cars are 7-8 wide, the Speed Champions are 9-10 wide... And even the new road plates still only give you 8 studs for each lane.
That sink piece looked way too realistic for a LEGO that isn’t modern day. The dark saber I’m surprised they didn’t just use a regular Katana piece to represents it. I agree with Chewie, I feel the same about helmet size of modern Vader and Stormtroopers.
The flat top chests are also being used for trunks in Harry Potter, and coolers in Lego Friends (surprised we haven't gotten a cooler in Lego City yet, though).
The old small doors do allow for some quite nice buildings that are somewhat to scale with only a few pieces. But yea, they're quite useless. Although I think the accompanying small windows are still in use?

The grey bow piece you showed was not an upgrade. It was a piece designed for Heroica microfigures. It was never intended for minfigure use
Speaking of Heroica, he forgot to mention the new knive/dagger desighned for those games.
