I'm Canadian, so I can't speak for Americans, but I use buttercream because I like it best and it is easy to work with. Lots of the cakes I make for my cake business have fillings that are fruit, custard and cream based.

oh and small tip when u bake the blue cake add white chocolate chips tastes good and somewhat resembles the stars :D and shouldn't the pattern be red, white then blue? Cuz it kinda looked like the french sovereign flag (the outside icing bit i mean)

For those who dont like that much buttercream frosting substitute half the butter with the same amout of creamcheese its delicious...and creamcheese with whipped cream & sugar its the best frosting ever!

Oh, I see...if it is not staying where you pipe it, it is most probably too soft, so yes, putting it into the fridge or adding more icing sugar is best.

Well now I just figured it out on how to make a Greek cake. I want to make a cross in that blue so I have to cut only 4 parts out and fill it in with white frosting. The other layers will be blue and white so all my layers need to be blue and white but the blue on top is what I payed attention to for the top left hand corner of the flag so when you cut it, it will form a cross. Now for the American cake, how do you make the white dots for stars within that top blue layer ?

I made a cake similar to this and I'd recommend something like vanilla mousse or cream filling that's lighter and not as sweet as having so much icing between layers
That would be a great idea!
Take the leftover scraps, cut them up, blend them in Cool Whip and make a red-white-and-blue trifle!

I am a professional Pastry Chef for the Biltmore Hotel. Your idea is cute, but instead of the red. white and blue ribbon around the cake you could have wued gold iceing making horizontle lines out of a medium round tip making sure that the next line was close but not touching the line next to it. Then decorate the cake as you will on top but on top or close to the gold border use those large malted milk balls as garnigh , close but not touching. When cutting the cake cut between the gold poles,

can u do red and blue velvet cake like red on top blue on the bottom then u got the blue icing going on top of the red and u got the red icing going on the blue
Honestly, sometimes it's not worth the effort and if it's broken too badly, I start all over. Freezing the cake can sometimes help...it makes it easier to work with, and then the buttercream can be used to "patch" it up. Refreeze once you have a layer of buttercream, and you should be able to work with it a little better from there.

If you were missed, sorry, but quite often you can find your answer in the video, show notes or already discussed in the comment section. How much buttercream you need will depend on the thickness you put on your cake. That is up to you. Start with one batch and go from there.

Until it is frozen...the colder the cake, the easier it is to work with. Under the lights in our kitchen, my cake softened quickly and was harder to work with.

I would double the recipe if you want to be sure to have enough...when you're just starting out, it's better to have too much than too little.
I'm not too sure what your question means...sorry! I often freeze the cake before starting a new layer of buttercream if that's what you mean.
Oh, but it is! That's the entire point of my channel. Looks hard, but it's actually easy when broken up into simple steps!

If your batter is cracking it might be over cooked..so just decrease your cooking time slightly.

The small red cake that you invert into the blue layer is 3 layers when you sliced it. In the picture it looks like only 2 red layers next to the blue. Am I missing something? I baked all my layers, just waiting for it to cool. Also, how many of your Vanilla cake recipes did you use for this cake
