I make a similar version, but I spiralize my onions and use no water. The moisture comes from the onions. I make the dough and let it sit overnight b4 dehydrating (in greenhouse in summer or cooked on woodstove in winter).

This one will work with freezing too, same concerns come to mind with texture but I imagine it’ll be close enough for personal enjoyment. The little texture nuances are more for if you’re wanting to explore chef level food construction, which I enjoy myself but I also enjoy more simple preparations too. Overall I think freezing the bread and the burgers will be darn close to the original recipes freshness overall, especially if you modify the cook time like I described in the other comment

I had a baby this last year and have been wrapped up in family life, but I am planning on getting back into the flow soon 😇 I’ve actually got a few videos saved that haven’t been uploaded haha. This time of year, I cannot get true sweet onions. My produce guy said that the sweetest onion he had were the quite large, over sized, organic yellow onions. Would these be mild enough for this bread?
I’ve always responded pretty good to it, but it’s been a while since I’ve really consumed it regularly. I made a gravy recipe that was made thick through a whole bunch of psyllium husk, and I thought that was pretty special, but I never revisited the recipe to nail it down all the way
@@uccellodellanotte right but it doesn’t have to be 12 hrs of energy use just for bread was my point. It could be a whole weeks worth of yummy foods and in that case it isn’t inefficient energy use by any means

Can I substitute flaxseed for something else I'm allergic
I’d say chia is next on the list for a swap but you could probably do psyllium husk or another binding starch in place of flax too

Any plant oil or ghee/butter will produce a similar consistency
