I found this online to answer your question: Bears defecate multiple times per day, and even more in the fall when they're heavily feeding preparing for denning. The amount of scat you see is a good indication of how often a bear (or bears) is using the area.

The head is not a kill shot. Go lower and try for a heart shot or lung shot.
