Please, assuming I submitted just Chapter 1 of my Project Work and the similarity is 26%, does it it mean when i joined let's say all the 5 Chapters of the Research Work, the similarity percentage would increase huge?

Ideally, you are to check when you have completed the entire work. Checking page by page will definitely give u different percentage pls.

If your document has an >25% similarity index then without a doubt the student has committed plagiarism.
