But he existed for far longer than that. He existed as a Maia (singular of Maia) he wasn't known as Gandalf, but Olórin, and came to be before the world was created.

@@HellVops Give the time that Tolkien wrote the series and the stereotypes of that age, I think they took form of old men because of the "old wise men" stereotype.
The Ishtar was sent to Middle Earth to help prepare the peoples (all the good races) to fight against the return of Sauron. So they needed to take a form the various races would look up to and listen to. While the Elves would know and trust the Ishtar for being sent by the Valar (very few actually knew they were Maiar, Elrond was one) but other races would be more willing to listen to aged beings whose image suggests they have experience, "they know what they are talking about".
Owlkitty would be batting at Smaug just like an ordinary cat does with a moth in a bright light. Probably would eat him, too.
