Look how disgustingly watery that tofu is. Mapo tofu is supposed to be more thick than thin and watery. The thick sauce is supposed to be blended into the sofu. Her dish will taste like the tofu and the sauce are separate because it's so watery. She hasn't got a clue what she's doing.

I love mapo tofu! I’ve been making it for my partner and I at least once a week. For mine I sauté 1 bulb of roasted garlic (mashed up), a small spoon of minced ginger, 8-10 dried chillies, 3 tablespoons of chilli bean paste, 1/4 tsp of Chinese 5 spice in 1/2 a tbsp of canola oil. After a few minutes I deglaze the pan with 2 tsp of shaoxing wine. Then I add 1 cup of (vegan) chicken broth with 1 tsp of cornstarch and 1 tbsp of soy sauce. Once that is combined I add in 1 cut up block of medium firm tofu. I let that cook/thicken while I thinly slice 3-4 stocks of green onion which I add in and let cook at the end. Once I’ve portioned the mapo tofu I add 1 tsp of homemade chilli oil on top!

it's nice on a sore throat and settles ur tummy?? personally and from everyone i know spicy food tends to inflammate cold symptoms and it does not do wonders for ur digestive system either... do u eat a less spicy version or a variation of mapo tofu?

Clears up sinus congestion like a dream too (although you may or may not find a runny nose to a totally plugged up one preferable haha).
Looks goooooood. Whenever I make my vegan mapo tofu, I like to add TVP a little after halfway to simulate the pork bits. What kind of chili flakes are you using when you made your chili oil? I'm kinda assuming Guizhou chili flakes.
i recently learned you can make chili oil in the microwave, be careful but it works great and saves at least one dirty pot! haven’t tried it with chili crisp yet
