Oh my word does this every look good. I have never ever slow oven roasted tomatoes. I always end up doing sauces or salsas with them that doesnt involve me doing that but this sure looks delicious. Think i'll have to give it a try!! Thank you for this :) ~Erinn

Looks delicious, Woody. The tomato flavour becomes very concentrated when you roast or dry a tomato. Have you tried freezing them for later use? All the best🍅
