I feel like Chef John is like Bob Ross in the 90's. I may not paint or cook much, but I'll still watch every episode for the soothing voice over, great sense of humour, and the beautiful creations.

Man, at the end, Chef John was crushing those dumplings so fast, I thought for sure he'd induct this recipe into the clean plate club, before the video was over. Alas, it had to happen off-camera

Made it last night. As he said, it's super delicious. The wonton wrappers were surprisingly tender and unassuming! (You know how sometimes the pasta can be thick and heavy and take over the dish? Well, not so here! Light enough to let the filling and sauce shine). Followed the recipe as written except poblano for jalapeño and 1 cup creme fraiche and 1/2 cup cream. As normal for Chef John's recipes, this is uncomplicated, easily mastered and the results impressive. By the 5th or 6th tortellini I felt like a Italian pro. whipping them out...Round the finger, round the finger. So much fun with food! Thanks again, Chef. Madame Magoo

You know, melt in your mouth, not in your hand, but they never said anything about in your tortellini; go ahead, and see how it works! But definitely take out the crab meat and....actually, most of the ingredients aside from mustard would work with chocolate, although maybe use a nice dark chocolate instead of M&Ms. Or at least use dark chocolate M&Ms.
Wow. Chef John just made me remember that I was that 14 year old making Parmesan truffle fries and crab tortellini with pea soup. So good but soo much work to make your own pasta dough and form the tortellinis.. the wonton hack might be life changing
I used half of the crab mixture to make crab tortellini for two (which was spectacular), and the other half to make crab cakes Eggs Benedict for breakfast the next day. (Form leftover crab mixture into 4 patties, then dredge in beaten egg and panko crumbs, and fry.) Yum!
Thank you so much for the wonton wrapper idea! I want to make a nice meal of surf and turf pasta for my dad's birthday. These crab tortellini will be perfect for the surf and I will do braised beef short rib filling for the turf with a brown butter sauce to let the pasta flavors shine through. Absolutely delicious 😋 I didn’t use the Jalapeño and I added extra mustard, old bay and Worcester sauce, I also used breadcrumbs too. With the sauce I used Tarragon instead of the Dill and I’m absolutely stunned at the flavour 😋😋 I’m not a crab person so I was a little unsure and I don’t recommend tasting the stuffing until the END. HIGHLY RECOMMENDED 👍🏼😋😋

Not too shabby. I've been trying to figure out what to do with my won ton wrappers I have left over.
