  • 【Ingredients】
    1 salmon fillet (approx. 120 g)
1 pinch salt & pepper to season
    ¼ medium size onion
    50 g shimeji mushrooms
    2 unsalted butter cubes (5 g each, 10 g in total)
    ½ tbsp sake
    [ For Serving ]
    Finely chopped chives or scallions
2 tbsp Japanese bonito soy sauce
    【Steps】
    1. Preheat your oven to 220°C. Meanwhile, season both sides of the salmon fillet with salt & pepper.
    2. Cut the onions into thin slices。 Chop some chives for garnishing at the end.
    3. Apply 5g butter to a sheet of aluminum foil. Cover the bottom of the foil pack with onions. Put the salmon fillet on top of them, and top with shimeji mushrooms. Add the remaining 5g butter to the foil pack and drizzle sake over the salmon. Seal the foil pack well as shown in the video.
    4. Once the oven is preheated, bake the salmon foil packet in the oven for 20 minutes.
    5. When the cooking time is up, take out the salmon and check the doneness, see if additional cooking time is needed. Sometimes thicker salmon fillet takes 3-5 minutes longer to cook through.
    6. Drizzle bonito soy sauce over the fish and garnish with finely chopped chives before serving.
