    Yummy Blueberry Crumb Bars - Irresistible Treats To Satisfy Your Sweet Tooth!
    Here is my sister Nadia’s famous Blueberry Crumb Bars!
    Ingredients for crumble
    3 cups of flour
    1/2 tsp salt
    1 tsp baking powder
    1 cup sugar
    Zest of 1 lemon
    1 cup of cold cubed butter
    1 egg (cold)
    Ingredients for filling
    4 cups of frozen blueberries
    1/2 cup of sugar
    Juice of 1 lemon
    4 tsp of corn starch
    ‼️ Preheat your oven to 375 FH (190 Celsius) and line with parchment and 9x13 pan that is 2 inches deep.
    Directions for crumble
    To a food processor add all your crumb ingredients in no particular order and pulse until combined.
    then add 2-3 tsp of cold water and pulse again until it forms a crumb/sand like texture. It should be crumbly yet you should be able to squeeze and hold.
    You will take half to form a thin layer to fill the bottom of a 9x13 deep dish pan and the remaining will be crumbled overtop the blueberries.
    Directions for filling
    To a bowl add your frozen blueberries, sugar, lemon juice and corn starch and mix to coat well and fill in the pan over the already pressed thin layer of crumble.
    Top with the remaining crumble by covering all but leaving some blueberries peaking through.
    Bake for about 45 mins or until golden and blueberries bubble.
    Remove from oven and place on wire rack and leave to cool ten mins in the pan.
    After ten mins, release the bars with the parchment paper and place on cooling rack to fully cool before slicing into bite size bars. (1-2 hrs full oil down/ set).
    This recipe will make 36 square bite size crumb bars!
    You can dust with powdered sugar if desired and serve at any event.
    Spring summer is the usual blueberry/lemon combination bursting with bright flavours .
    Fall and winter she usually does cranberry/ cherries with orange zest and juice!
    These are a hit at any event! Especially the convenience of how quick this whips up! Having everything done with no thawing needed!

    I want to mention that I just made this. And its a HIT. I was one cup short of blueberries 🫐 unfortunately. 😢. I just put a cup of frozen cranberries. But overall what a delicious treat. This could be my new favourite morning treat ❤.

    I LOVE this episode. Franca you have such beautiful daughters - guess the apple doesn't fall from the tree! Ha Ha Ha Ha We love sweets in our house so I will definitely be making these - but I have fresh blueberries, will I have to buy the frozen?? Will have to do that. Love you guys! Just so you know there is no problem with fresh blueberries- we just use for convenience frozen as this is a fast recipe and no thawing needed at all for anything (butter/ egg of frozen blueberries) as long as you have 4 cups worth of fruit for a 9x13 deep dish pan you will be fine 🫶🏼

    Well, now I know what to do with the blueberries I have!! 😊 What a truly beautiful young lady your sister is! and so clever to figure out the butter measurements.. It never make sense that after you throw the wrapper out, well, there goes the measurements!! I have printed this recipe, what yummy goodness..       No, we usually do blueberry & lemon and fall /winter only with cherries and cranberries but any fruit will do as long as it’s 4 cups worth for the size dish we have 9x13 2 inch deep and ingredients with measurements listed 🫶🏼
      Raspberry would be delicious no doubt!!
