Can someone tell me the ingredients and quantity for the rice vinegar. And the salt and sugar quantity too. And is it normal to put sugar in it? Sorry, Im American haha
A lil late to answer your question, the water to washed rice ratio is around 11:10, rice variety varies as different sushi rice has different moisture absorbing power, after the rice is washed and water has been poured to the rice, let it soaks for 30 minutes to give the cooked rice a nice flufiness. After the rice is soaked, you can start the cooking process with your rice cooker. On the other hand, when your rice is going through the cooking process, you can prepare the sushi vinegar with 30-30cc rice vinegar, 30g Sugar, 7-10g of salt, mix it well and try to avoid heating the vinegar as it loses its flavour. The sushi vinegar recipe listed is for each 180grams of cooked rice. When mixing the rice and vinegar, prepare a larger tray where you can move your spatula freely. Try not the overmix the rice, the perfect way to mix the rice is to cut and fold the shari(sushi rice) as shown in the video so that the rice wouldnt be overmixed(sticky and gooey), after its well mixed, cool down the sushi rice, and of course its best to cool the rice with a fan or such. Once the rice reaches the body of a body temperature, it should be good to use(quite contradict to common believes where sushi should be serve cold but the reality is to serve at body temp). A bit of my personal tips on chosing sushi rice is of course best choosing short grains, if short grains werent available in your place then choose medium grains like calrose from america, but still its the best to use short grains especially the ones from japan, they are expensive but surely worth it. Best sushi rice should remain the flavour of rice and texture when cold, and should retain its moisture even its cooled to refrigerator temp, and when mixing the rice with vinegar, the rice should absorbs the vinegar nicely with a glossy looking instead of a watery pile of rice.

みなさんは、すし酢の塩が多いと思っているかもしれませんが、江戸前のすし飯は塩を多く入れるのが特徴ですよ。
あと、私がすし飯を仕込むとき、炊く時の水は米の総重量に対して8割で炊いています。すし酢は総重量の2割を混ぜます。そうすると硬さが丁度よく扱いやすい、すし飯になりますよ。
塩は多く入れても4~6g 砂は明らかに間違え 酢も多すぎる 炊いた米は330gなので2割なら、すし酢は66gになり有り得ない量です 後、生米は150gです この動画位いい加減なコメだな
やはり和食は世界最高峰。

私はあらゆる形で米に夢中です。
米は土釜なら強火→中火→弱火の順で炊くのがメジャーだが、これだと米が水気を含みすぎてただネチョネチョして柔らかいだけの米になるから、私は好きじゃない。ということで、最強火→最弱火の極端な炊き方をする。こうすると、外は硬いが中身は柔らかい丁度良い食感が生まれる。逆アルデンテだな。ついでに炊き上がりも十分くらいと超早い。
これは柾式という炊き方。気になったら検索してどうぞ。

私のインスタントの勉強中の作り方は。
圧力鍋で水分すくなめで炊き。(圧力鍋でないと水分少なくては炊けないようだ)
炊いたら、たれを加えて混ぜる。
水分を飛ばさなくても、これでインスタントにさませるだけでできるようだ。
こんなことすると米粒割れないのかな?それと最初に水で洗うときぬか臭くならないのかな?この工程を最後にやればおいしくたけるような気がするんだけどなぁ。でも熟練された職人がいうんだからそのやり方であってるんだろうけどさ。

油は水には溶けません。現代の米は機械でしっかり糠が削られていますので米をゴリゴリすると傷めるだけです。

ですが調理学校で色んなシェフ(料理長)と会う機会があるんですが、1合の量も150か180か結構人により別れてます。
おいしいしやりはすしづくりにかかせません。
いつも家で作ってるすし酢と比べて砂糖と塩の分量が3倍くらい多い。こんなに多くでも良いのか。
今度この配合で作ってみよう・・・

米の卸売から直接買う場合には、その問屋にどこまでやってもらうかによる。

このときの注意点は米の粒を割らないようにチカラを入れてゴシゴシ研がないことなあと最初2回は米ヌカを落とす為に軽く混ぜるように研いだらすばやく水を捨てることこの動画みたく乳白色の状態の水の中でジャブジャブやってるとヌカが米粒に浸透してヌカくさいシャリになるから最初の2回は1分研いだら水を入れて手早く水を捨てることお米は1分水の中につけると浸透してくから手早く、研いで手早く水を捨てるヌカ水を米に吸わせないように研ぐことby寿司屋でシャリ炊きしてる人より
