- Trigg Brown of Win Son in NYC is in the Munchies Test Kitchen making fan tuan, a Taiwanese breakfast treat made to be eaten on the go. Trigg makes this dish with glutinous sticky rice, fried Chinese crullers called youtiao, a fried egg, sweet and salty pork floss, salted radish pickles, and even includes some slices of avocado. The result is a breakfast full of flavor and texture with every bite.

Yes, -- but NO ONE makes anything the same! Critical comments on ethno-cultural cooking infuriate me as it always supposes that there is only one way to make something. For example, just ask an eastern European about the "right" way to make borscht. You will never see any agreement. It will not only vary between countries, but between regions and between cooks. So, in my opinion, anyone should be able to take on any type of cuisine without the reproach of its not being "authentic." The vary nature of cooking is creativity -- and that includes umpteen variations on a theme.

@@GIN.356.A I did a little research and found out that it (飯糰, Fan Tuan) first became popular in Shanghai and was brought to Taiwan, Hong Kong...etc by immigrants. People usually eat them as breakfast and now they might be made and served in different ways. But the ingredients this chef put into his Fan Tuan is pretty original and basic, except for the avocado slices of course.
飯糰 means “a ball of rice”

I am super proud of a white guy attempting to make fan tuan at home!! Being shanghainese and having lived and worked in Taiwan this was one of my favorite go to breakfast foods! I would have never made it at home but after seeing him do it I am thrilled to try it myself! Good job! BTW I love your twist on it and moving away from the traditional :)

He is not just attempting it at home, he is actually a restaurant chef and does it in his restaurant :D cooking is a trade and can be learned, you just have to score an apprenticeship.
I live in Toronto and we use to have this at T&T - an asian grocery store chain. Not sure if they still have it but the lady behind the counter would roll the rice and you get to pick 3 ingredients to add to your sticky rice roll. You also got to choose between sticky white rice or sticky purple rice!

Trigg is someone who knows his shit and also understands his relationship with Taiwanese food as a white chef. Super respectful and is constantly learning unlike other white chefs who think they understand Asian food after a few months of cooking it and decides to open a shitty restaurant with no Asian chefs or employees.

Taiwanese cuisine is pretty innovative and always taking inspiration from other cuisines (like Japanese). As a Taiwanese person, I'm fully on board with the avocado - it looks delicious! Hope fan tuan becomes more popular in the US!

Well Taiwan was colonized by the Japanese for 50 years after the Qing lost it to them so no surprise that Taiwan has many japanese influences. Not to mention the many different Chinese cultures that were brought to Taiwan from Chinese people fleeing a CCP controlled mainland China.

Fantuan is a rice ball and can be used to refer to many different dishes. The specific name for this is cifantuan which originates from Shanghai but is now a popular breakfast item in Taiwan as well.

The best part of Youtiao is actually the tips on each end. When Youtiao is freshly fried, the tips are the most crispy part with the tiny oil-smoky flavor.
I live in Taiwan, having this (飯糰) twice a week. Fried egg with some soy sauce, that's how we eat.

It’s important to use a metal bowl so that it retains the heat... uh no that’s not how thermal conductivity works. It feels warm because it’s drawing out the heat because metals are good conductors and poor insulators.

I love this! I'm Taiwanese and my mom would make these when she was too tired to cook a full meal and they tasted so good every time. :)
It's always nice to see someone genuinely like a food and want to introduce it to other people.
I lived in Nanjing for 5 years, FanTuan was a go-to breakfast item for me for about 2 of those years. Even though there are core components to it, it's still highly customizable, with some vendors giving you a selection of assorted pickles, cured meats, egg yolks, and veg to choose from and even modifying the core ingredients a little, like putting in a little black rice into the white rice to make the whole thing purple. You don't have to be that hard on yourself my dude, that fantuan looks amazing and I'm pretty haters would stop hating if they could taste your version.
I worked in Taiwan and the diet there had me on toes, alert and flying at work every day. Taiwan has food for busy people on the go down, for sure

Love fan tuan(飯糰)! Never tried it with avocado, but since it's rice it'll probably pair well. Also Taiwanese usually drink soy milk when eating fan tuan. Give it a try!
OMG the first stop whenever I go home is the little lady who only does Fan Tuan. She opens at 4am (perfect for jet lag) and she sells the best fan tuan's for a buck. He's right, you can eat this every morning and never get sick of it. @trigg, thanks for sharing and bringing this amazing dish to the western world

You can also try deep frying the egg, it makes the texture chewy while allowing the yolk to break and leak out, but make sure the oils hot,

I enjoy fan tuan as a convenient comfort breakfast. I typically assemble them in plastic sandwich bags since one end is already sealed for easy carry. I appreciate your tips. This version looks great.
The avocado makes a lot of sense in terms of flavor and compatibility ingredients. Love seeing Caucasians so in to Asian culture. It's refreshing to see.

I’m the opposite of this dude. Born in Taiwan and making 飯糰 in my camo hat in the mountains of Northern California. Haven’t been to NY in a few years but this place will be the first place to visit next time. The videos are perfect.
Pretty interesting, I didn't knew the dish. As an Spanish guy, I find interesting that the filling includes the youtiao, which seems to be what we call a Porra, a type of churro we normally eat for breakfast dipped in hot chocolate or white coffe (the internal structure of the fried dough soaks the liquids like a sponge). Not sure if it's the same, th(d)ough
I’m Taiwanese and now live in Spain, I can tell you that they r the same thing, but taste kinda different. Churros are often chewy like bread? I think and youtiao is more crunchy. Hope

Only thing I dont like fan tuan is that you cant put it in a fridge for even a day because the rice will dry up and makes it fantuan waaaaay too hard to eat

I’m actually working on something similar for my channel. In Hawaii, we have something called a bento roll. It has all the elements on a bento in a roll just like that!! Korean chicken, chicken Katsu, shrimp tempura, or orange chicken as the main ingredient... but rolled with kamaboko, green onion, a piece of fried spam... all rolled up with rice and sometimes a seaweed sheet. Yum!! Never thought of a sweet one though! ☺️ yum! Great video!

Actually...we use long grain glutinous rice for rice ball...but it's really not easy for ppl who live outside of East Asia to distinguish all the varieties of rice. He's really doing a gr8 job already, thumbs up👍👍👍

when i was studying guoyu in taiwan i would sometimes buy youtiao for brekkie; i am not a fan of rou soing but it is hugely popular in taiwan they even put it in there maki rolls

Local asian groceries are always really surprising. The amount of stuff they manage to pack into those places is incredible! Also if its a mom and pop place and you're nice about it, a lot of the time they'll be willing to order ingredients they don't have.

When I was really young, I used to eat the original Shanghai version, it would have sweet sesame paste inside instead of savoury protein, the outside was dipped in sugar

Go to any Asian market and ask, they’ll be more than happy to point ya in the right direction! (The pork floss is dried strings of pork and is amazing!!)
