The salmon roll needed some "cucumber" to make it look real, i've never had a salmon roll with just salmon. And the tuna needs a little streaking of paler colour.
Every sushi restaurant I’ve ever been to has offered salmon and tuna rolls with nothing other than salmon or tuna with the rice and nori. I’m surprised you haven’t encountered that before
I like, that the maki look as if they had a bit of wasabi stuck to them, due to the green buttercream. Personally I like the roe the best. So cool. And the board is so cool, too

I don't know how you could've done it differently ... but while I liked both the nigiri and the salmon roe ones, the salmon was a bit ... It was rice with a gelatin blob in the middle.
I had to make a giant sushi cake once and I couldn’t think of a good way to make tiny grains of rice but I remembered being obsessed with this Japanese poppin cooking candy kit when I was younger that you add water to this powder and it made “rice” (tasted way worse than o remembered😜) but it looked like rice!

This is a bit random, but have you thought of adding a little ring to the top so it can go on a keyring? I lose stuff so much so my whole life if attached to my keys. I travel for work and love this, it’d be neat to be able to attach it to my keys so i can have a version to go everywhere with me that I won’t lose 😅
I believe the actual sushi rice with some sugar and vanilla (maybe also cream?) would do for a rice, but I appreciate the decision of making an imitation, it was definitely more interesting to watch the process of

Ok so I don’t know if you already succeeded the water bottle cake but, I had an idea if you didn’t succeed it, you could just put blue food dye so it looks different or if that doesn’t work, put a Palete in front of you and start mixing the colors until it looks clear or white so it won’t give a yellow tint Hope this helps 😁
