ROYAL BUTTERCREAM RECIPE! Light and Fluffy | Trendy Butterfky Wave Cake | Cake Decorating Tutorial

- In this cake decorating tutorial I show you how I made this Butterfly Wave Cake using Riyal Buttecream. You will love this light and fluffy, less sweet buttercream! I would not use it for piping other then cupcakes because if it'Add butter in chunks . Add salt. Allow to mix on medium for 10 full minutes.
s fluffy nature. It is similar to Swiss Meringue in flavor but more like a whipped in texture. And it does not crust.
Royal Icing Buttercream=
5 Tbs Meringue Powder
2 lbs Powdered Sugar
3/4 C Water
4 lbs room temperature Unsalted Butter
6 Tbs Clear Vanilla
Salt to taste
Combine Meringue Powder and powdered sugar in mixing bowl with paddle attachment to combine on low. Add water and mix till well combined on medium. About 5 minutes. Add butter in chunks. Add salt. Turn up speed to medium and mix for a full 10 minutes. Add a tiny bit of purple food coloring to combat the yellow before the 10 minutes. Use immediately or store in airtight container in fridge. You will need to rewhip for 10 minutes before use. Add any coloring you like!

Can you recommend a substitute for meringue powder please? Can i use corn syrup instead?
Egg whites are substituted with meringue powder. If you can find pasteurized egg whites, they are the same thing, but not dehydrated.

Very similar to Swiss Meringue. I just thought this would work better then the American because of the smooth texture. My boss told me about it;)
Is this good to use on fondant cakes? To cover and hold up decorations?
I honestly wouldn't because it is not as stable as an American or swiss.
As you are just replacing pasteurized egg whites with powdered egg whites. I'm simply asking because I use our fo Swiss meringue buttercream recipe and I work with royal icing for biscuits and this looks pretty much the same?
That was my thoughts also. A no cook swiss meringue icing. Royal icing for cookie decorating.
It is similar to Swiss for sure. But it is definitely a little lighter.
Can we use shorteneing to subastitute half of the butter ???

That sounds about right;) I used Americolor violence but color mill would be perfect.

Mary that’s beautiful! I am wondering if that would work here in Florida because it gets very hot here. The only way I can transport a cake is to pack it with dry ice.
It will be temperature sensitive. Not sure if I would try it? If it is kept cold, you would be fine.

The royal icing is essentially Swiss meringue because even though it uses meringue powder, which is just a powdered egg white.
It is very similar, but a little lighter and less air bubbles.
Sooo pretty! 😍 I'm definitely going to try this royal buttercream; I have such a hard time getting my American buttercream smooth so I hope this is the answer! And bonus-it seems to be Minnesota cottage food safe!
Is Minnesota pretty strict for cottage laws? I live in Iowa and they are pretty relaxed here. Illinois right across the river from me is waaaay stricter. I work on the Illinois side now in a bakery,, but I had my home based business for years.
@@sophisticakesbymary It's pretty relaxed here too; we just can't use milk or cream in our frostings, or the cooked meringue frostings. We also can't sell things like cheesecakes and cream pies, basically anything that needs to be refrigerated.

5 tsp of meringue powder, and 6 tsp of vanilla, not Tbs as indicated in the description box, right? That's what it appeared to be from the video. Just checking. It looked like 2 Tbs & 1 tsp of meringue, so 7 tsp?
Tbs=tablespoons, tsp=teaspoons?
No, it is Tablespoons;) I have a 2 Tbs. Measuring spoon so it looks like less. And the vanilla I did use tsp. But it wasn't enough. You could do it to taste.

Hi, does this butter cream acts the same as the Swiss buttercream? It hard in cold refrigerator and we can take it easily to the venue? And does it holds fondant decorations well ?

It does, but then you will have to rewhip it at room temp for another 10 minutes;)

I use the recipe from MerciCakes. She stacks her wedding cakes with RIBC. 💕
Where do you find that recipe?
This is Wilton buttercream recipe that I learned during a Wilton class. For hot weather I use 3/4 butter and 1/4 high ratio shortening.
I remember the wilton being thicker? This is very light and fluffy minus the air bubbles.
@@sophisticakesbymary exact same recipe. I still have my instructor notes. Has been my go to recipe for almost 2decades. I only use the Wilton Meringue powder as well. Though that will change as the Wilton supply dwindles.
