【Wikipedia: Traditional Chinese bookbinding, also called stitched binding (Chinese: xian zhuang), is the method of bookbinding that the Chinese, Koreans, Japanese, and Vietnamese used before adopting the modern codex form.】
China is one of the earliest and main ancient civilizations. It is hard to deny that "Japanese style" was not adapted from China though Japanese may had developed a slightly different way of binding.

Wonderfully produced video of a very simple, beautiful, and elegant technique. If you would like to create a more tightly bound volume, you can replace the binder clips with two 2 inch spring clamps (Generally about a dollar each at a home depot or lowes) and two wooden rulers. They will hold the pages together very firmly and allow for tighter stitching over all.

This looks like it would work well with the double needle technique you use for sowing leather. Also, you might wanna cut recesses in the back for the threads to protect them, or they're gonna wear out and snap in no time.

You can also use an awl for making the holes if you plan on doing a lot of these kinds of craft projects and you don't want your fingers to get sore from using a tiny push pin over and over again. They can be very inexpensive. I mean, apparently you already have a bone folder, so having an awl as well is not exactly a leap.
