    i had gizzard at an african wedding, it was tough and not very tasty but i believe they are pretty popular in some african countries. probably sell well with some dog breeders too.

      Grew up on a subsistence type farm and grew hundreds of chickens per year which were for our family and anyone who wanted to buy them.
      Most people weren't interested in gizzards, hearts and lovers back then so we kept them for ourselves and packed them up in dinner sized weights with gizzards and hearts packed separate from livers. We had 2 ways to cook. If we were going to be frying the gizzards/hearts mom would cook them in the pressure cooker the day before and cool them. The day of cooking they would be seasoned and coated before frying just as you would any raw meat. Very tender and tasty. The other way would be to simmer with finely diced onions, celery, carrots, thyme and chicken broth until broth has condensed in half and then make gravy to serve over mashed potatoes. That was my favorite. That tough connective tissue when softened provides extra college. Which is good for skin.

    Gizzard and intestines are great when you know how to cook them. 1. Gizzard too chew style braised soft chinese style taste great 2. Intestines you need to soak in hot pot awhile with seasoning (chopped green onion, fried garlic, light soy sauce, parsley & little water)

    I think each animal should be killed the second they are put in the kill cone one at a time so they don't have to see the others and flap around so much we wanna give the animal as much respect as it can get in these last moments chickens have better vision than we do and they are very social these are members of their flocks your putting beside them they're smarter than we give them credit.

      I agree with you on all levels. More and more as I see these animals processing methods I feel like we are not being respectful as we should to these beautiful animals from Mother Nature.

      Believe it or not, it's been shown they're less stressed even during this process by being together than by themselves because they can't handle not having other chickens around them because ironically they know there's safety in numbers

    I know you have been asked this because I just seen a video where you answer but what I’m asking is about chickens that is too old or don’t have enough meat or what because we have put them on ice or refrigerator even have put them in salt water for a couple of days use them in a chicken & Dublin or even try to eat them as a regular cook chicken pick up the bold and they are really tough
    WHY WHAT AM I DOING WRONG
    ? Is how to get a chicken not tough

      I have found that pressure canning the chicken makes them super tender! With young meat birds I raw pack and don’t even add broth because the process of pressure canning makes the broth. I put legs with bones in one jar, thighs with bones in another and then cut up raw breast meat and tenders in chunks in a jar. 3 qt jars fit 2 birds.
      With older birds you could try raw pack or cook them and make a meat broth. To do this, Weigh the birds. For every pound of bird use 1 quart of water. So a 5lb bird would use 5 qts of water. Place the water in a pot, add whatever veggies and seasoning you would like. I quarter an onion and add large pieces of carrots, some salt and pepper and cloves of garlic. Bring the water to a boil then add the whole chicken. Simmer the chicken for 2 hours. Remove the chickens and large pieces of veggies and strain broth. When chicken cools, pick off the meat to place in jars and add the broth you made to the jars then can them. There are many videos out there about canning chicken and also be sure to check the instructions that came with your canner for other info. Hope this helps.

    hey, very interesting to hear about no market for gizzards yet we can never get enough in Kenya, a kilogram of gizzard costs almost like the price of chicken!!! id clean them any day....loool!!!

      I grew up on a dirt farm in Washington state and we always saved the gizzards and looked forward to the meals that used them.
