You know it's bad when the cream sauce hasn't soaked into the fish AT ALL. Means it's so dry it's moisture repellent
Kind of like those weird cheap breakfast shake mixes. Powder so dry it forms water-repellent pockets that refuse to stir in.

@asad asd To an extent it does. When food still has moisture, it's much easier for more moisture to enter inside. There are multiple reasons for this, including water tension, and the mechanics of osmosis. Some dried meats are almost hydrophobic.

That was just ton of cream sauce on that fish. It would just overpower the natural taste of the fish. Also pouring it on top is pretty trashy. Better to put it on the plate or under the fish.

I've been catching and cooking salmon for as long as I can remember, and NEVER have a seen salmon that fucking bright pink unless it came out of a box or plastic bag from the store.

Aquacultured salmon are feed pellets with dye in it! Their natural food is expensive so they cant feed them it, thus losing their pink colour. I can comfirm cause i work at an aquaculture facility

Farmed salmon are fed food with coloring because the fish are not able to eat their natural diet which gives them the salmon color we are familiar with. Raise flamingos in captivity without feeding them their natural diet & they will be white instead of pink.

The cook is forgetting that its not about what they like. Its about what the customers want. Like the chefs they are, they need to cater to the people’s needs to be successful.
Now I’m not saying you have to only do what they want to do, not by any means, as the uniqueness in a dish is what gives a restaurant its signature flavors. But you still need to make sure that people like these flavors.

What I like about Gordon is how he is so nice to the waiters/waitresses and he can tell if something is fresh or frozen. I wish I had that skill
Its fairly easy. Fresh food is tender. Frozen always has a taste of melted ice accompanied by the taste of refrigerator that has been off , sometimes chewy from heating in the microwave for too long.

No, he is not right in every case. He is picky and for the right reasons because when you go out to a restaurant you want something special.
But much food he gets most people would eat when they try it at home and the was the result.
It is also exaggerated for the show.
And he is very biased by his personal taste. You see it when he gets served really spicy food or pine apples on pizza.
He is a very good chef and what he does is great. I have a cooking book from him and tried some dishes out of it.
But there are also people who like other dishes like very spicy ones with chilli peppers and so on.

As for really spicy food it is a reasonable complaint for a restaurant when a chef should know how to finely tune his dishes to balance flavours. too much heat is masking the flavour. It is acceptable at a Mexican street food joint or a bar putting on a hot wing challenge but not in a restaurant. I love spicy food too.

I mean, I know that salmon is supposed to have a rose/pink colour, but red? It had the same colour as my lipstick 😨
Some of that is food dye applied to commercially frozen salmon so it keeps its color while it's oxidizing but it doesn't even look properly cooked either. So just nasty all around.

Tidler a lot of farmed salmon is also dyed. In the wild, salmon eats krill, which is what gives the flesh its pink color. Farmed salmon is fed fish food pellets, which are grey, so the flesh is also grey, then dyed pink to look more like wild salmon. Most restaurants (especially chains)use farmed salmon until you get into more upscale dining.
