- The picturesque landscape of Switzerland, with its towering Alpine mountains and nestled lakes, may seem like a painting, but the terrain and climate are not suitable for cultivating grains. Instead, there are potatoes grown in the mineral-rich soil of the Alps, imbued with minerals. In Switzerland, the popularity of potatoes is so high that the annual per capita consumption reaches up to 50kg per person.
Making Swiss-style potato pancakes, known as "Rösti," is simple. Grate the potatoes to the desired thickness, remove excess moisture, and cook them in oil as if frying. However, this method often results in pancakes with low starch content and little moisture, making them dry and bland.
Tip: If you lightly precook the potatoes before cooking, the starch inside the potatoes will hold onto moisture, so there's no need to drain off excess water separately.
In Switzerland, when making Rösti, traditionally, you use firm potatoes with low starch content, classified as "festkochend." However, personally, I prefer the soft, fluffy texture of "mehligkochend" potatoes. So, I used those, resulting in a crispy exterior and a moist, tender interior in my Rösti.

[🥣Ingredients]
3 (400g) potatoes
30g bacon
salt
black pepper
( nutmeg )
2T cooking oil
1t butter
[👩🏻🍳Cooking Steps]
1. Boil the potatoes in water until the internal temperature reaches 60 degrees Celsius or for 8 to 10 minutes.
2. Once boiled, transfer the potatoes to ice water and let them cool completely for 10 minutes.
3. Peel the potatoes and grate them using a grater with large holes.
4. Mix the grated potatoes with salt, pepper, nutmeg, and bacon until well combined, then cook them on a greased pan.
5. Cook one side, then add butter around the edges of the pan before flipping and cooking the other side until golden brown.
