Try cooking the potatoes then just add the eggs to the potatoes. And wait until the eggs start to cook before seasoning. The salt breaks down the eggs.

The north side of Little Rock is beautiful. I camped at Maumel a few years back. The tent site was elevated and I had a great view of the river. Spent time watching the barges (which look like three story buildings gliding along at night) going up and down the river and watching hawks swoop down on squirrels, which were particularly aggressive in raiding camper's food.
I often visit public libraries when traveling. North Little Rock has some great ones.
And there's a supermarket just a couple of miles from the park entrance. A pizza parlor too - which I made good use of.
There's no place like home wherever that is.

I've been all over the United States and Arkansas is definitely one of the prettiest ones .
I used to camp in Jasper and also Harrison Arkansas quite often. I need to venture out further because it's so close to Missouri which is where I'm from. I'm on the outskirts of KC MO in a small town names Pleasant Hill Missouri. Now I'm itching to go back down to Arkansas again in my converted shuttle bus LOL!

Love watching your videos. As a guy that grew up in LR and lives out in utah now it is good to get a dose of home that I often miss. Little Rock is def underrated and just defined by crime it seems but west LR and that pinnacle area has a lot to offer
