✨Update: It's been a year since I first released this recipe and have a new easier method to make this frosting here: ruclips.net/video/8kAcmqoQE_U/видео.html
I’m so relieved it ended up being black cocoa powder and not activated charcoal! 😂 As far as black dye alternatives go, the cocoa powder will always be my first choice. So so excited to try this for a Halloween cake!
@@dazaiosamu4780 It would affect the taste at least some, but another issue to using activated charcoal is that it can be dangerous for people on medication, as it can negate the effects if anything containing activated charcoal is eaten within an hour either before or after taking the medicine. The charcoal decreases the amount of medicine the body absorbs, which can be reeeeally detrimental!
You nailed this! Adding a tablespoon or so of regular cocoa can offset the alkalinity too and create a more straight-forward light chocolate flavor. Hershey's original is especially tangy. Too much cream of tartar can taste metallic. Just a warning, black cocoa can cause some alarm the next day in the bathroom
Yeah that’s def something to watch out for so I have a range to use with the cream of tartar or maybe some won’t even need to use it. I’m incredibly sensitive to alkaline flavors as I tend to look for it to asses the pH in a recipe but yeah great point
I had never even heard of "black cocoa powder" until now. It's so odd that I, as a chocolate lover, never knew of its existence. I'll have to try it. I love the look that it makes. So elegant. I love the idea of the black frosting on the outside, but once opened, I'd like a rainbow of colored cakes on the inside.
The fact that I’m getting this sorta recipe, tips and tricks and info for FREE is absolutely beyond my mind... some really be charging $20 for a basic american buttercream tho like what😭 I couldn’t thank you enough for your great videos!

You genius! Made the whole cake today from the cake, to the filling to the frosting. It was a stunner and absolutely delicious! Trust the process was the phrase because at first it looked dark brown, but quickly became the most wonderful black and tasted delicious! Thank you so much for the 4 1/2 cup recipe. Perfect for my 3 layer 8 inch.
If you were to write a cookbook, I'd buy it in a heartbeat. I love your approach to recipe development, and you have a real talent for it. Looking forward to trying this!
Thats amazing. I had no idea there were even alternatives to icky black food coloring. You've changed the Groom's cakes and New Years eve pastry possibilities forever!
Please write a book that has this recipe lol I would definitely buy it! I love this! I really dislike food dyes specifically black one and the red one gives me minor allergy symptoms :( so this alternative is amazing for the black one 🥰 thanks!
I studied your videos and took a leap of faith, making my first chocolate ganache frosting on a coffee-infused oil cake (another technique I learned from you). I'm truly grateful for your work.

I'm a super basic Baker (Quick breads, dump cake, scratch cookies but everything else is from a Box mix) And I'm trying to understand the Methods needed to follow genuine recipes and I really appreciate how straightforward and easy to understand your videos are. Just found you and definitely going to watch more videos
I don't bake personally but this is revolutionary because you are right most of the cake videos that I see with black frosting would involve black dye. I suddenly remembered my last birthday where I had a galaxy themed cake. The baker who did my cake made it so delicious but my mom initially thought it was not good anymore to consume since the black dye would leave green stains on a white plate. This is actually a good info.
Oh, this is lovely! I like making cream cheese-based frosting myself, for that slight sourness to offset the sweetness of the cake and high creaminess.
Interesting 🧐 in Mexico we have Black coated breads using Totomoxtle aka corn husk ash. I use the ash when making pan de muerto ☠️ and it does not have any sort of funky taste at all. Another natural alternative to dye baked goods 😊 I wonder if the ash will work as a replacement in this black cocoa recipe tho 🤔 only way to find out it to make it!
I had my mind on using the dutch cocoa in my frosting for a Black and white theme. However, I decided to have my cake black because they wanted a peanut butter frosting (huge in my family). It turned out extremely well and I wouldn't have thought of that if I did not see your video. I will have to try the black frosting for our Sunday dinner next week. I really enjoy your channel!
wow this sounds like probably the most delicious frosting ever and the shiny black gooeyness of it all is giving me ferngully super mysterious i need this frosting in my life
so i've been getting into baking more and this was perfect for a birthday cake, in the exact amounts described. Anyways, my elbow hit the bowl when I was adding the cream of tartar to my hot chocolaty syrup and upended the entire bowl. D: We laughed, we cried... we made another batch. It came out great! I'm so glad I found this recipe last week.
Tried this for my Halloween party cupcakes and they turned out great! And they didn't stain our teeth! Definitely going to be using this in the future 👌

First video I ever watched of yours and for no reason except it popped up on my feed and I bake. WOW I will definitely be watching more of your videos! I love you and how you narrate and explain! Would love videos on your cake and filling if you don’t already have them!
This combined with your glow in the dark frosting is giving me all the Halloween ideas! Question, did the black frosting stain while eating? Black looks great but I know people don't like the staining after.
Yeah ...but the question was....does it stain? Oh noooo. Your teeth end up looking like white, polished marble...fresh from the dentist office!!! Haaaaa.... derdeeder.... 😂😂😂😜😜😜🖤🖤🖤
You are becoming my go to channel for baking fixes. Such a wealth of knowledge! I'm wondering if you made the frosting but weren't planning to use it right away, could you just put it in the fridge in say a sealed container then take it out when you're ready and then whip it?
omg this is a perfect black coloring!! AND it won’t negate your medications!!! why isn’t black cocoa the go-to pitch black food ?? (outside of just. black food coloring yknow kdjdskdsk)
p.s. did you just add black cocoa or sub all cocoa in your chocolate cake recipe for this black cake? would love the recipe for that as well. I’ve had great success with your 1-bowl chocolate cake recipe
Yeah that’s the recipe I used - it was just subbing black cocoa for the cocoa powder in the recipe. It does make the cake incredibly moist - so bake a couple mins longer but the cake is incredibly fudgy in texture
Not as hard as the glow cake though I regret wearing a black shirt as I was editing bc it wasn’t great contrast for you to see the cake itself. Usually pure white cakes are really difficult for me to shoot :)
I made it and it turned out delicious! However I do wish it was there was a direct link to your recipe in the description box… also when I found the recipe on your website the instructions weren’t matching what was said in the video. Example the recipe says to add the water and cocoa powder first, the video adds the sugar in that step

But yeah, I also added a note about how I work on my recipes, and you'll always find my latest notes and updates on the blog version (since that's editable). Thanks again!
So glad to hear about black cocoa and how to make black icing. My only question is does it stain teeth, skin and clothing? That is one of the major reasons no one wants any black on their cakes. Do you have a recipe for red icing.
Thanks for sharing looking forward to giving it a try. Getting dark frosting colors like black red navy blue etc is a total pain and on top of that all the gel food color makes the icing bitter. You're a 1 of a kind gem 💯👍💖. Could I use margarine to get the same result? Thanks I also wanna give your dreamy buttercream a go 😊
That is something I haven’t tried but I think it will work if the margarine has an emulsifier in the ingredient list: usually something like “lecithin”
This is stunning!! If you don't mind I would like to make a request. Could you please help with a fried yeast donut recipe that can be made at home which would be delicious, give a good rise, is fluffy and filling; one that has the remarkable prominent white line at it's center. I know a lot of confectioners have issues with making and frying such donuts. Thanks in advance!!
I don't know if you're against some saliva type enzymes, but using Amylase can break down the starches into more simple sugars. It should also not hit the colouring, but keep the gluey texture away.

@@tsnmproductions Look it up. Using activated charcoal in food is a very popular trend right now.
@@cbgbstew4072 is there a different taste between them? But whats the issue if you use activated charcoal over black cocoa?
Activated charcoal decreases the effectiveness of many medications including birth control, painkillers, and antidepressants.
