Cherry Tomato Harvest and Ketchup Recipe

  • We always get a glut of cherry tomatoes at the end of the season and have found the best way to preserve them is through ketchup. Being cherry tomatoes the sauce is sweeter than normal and make for the tastiest ketchup. Preserving this way (with sugar and vinegar) means we can keep the recipe organic and avoid unnatural preservatives.

    5:11 Ingredients list
    5:24 Remove stems and cut up larger tomatoes
    6:22 Add a cup of water and blend with a stick blender
    6:42 Bring to the boil
    6:58 Peel and grate the onion and garlic
    7:35 Grind the spices
    8:18 Add the salt and sugar
    8:33 Add ingredients to the stock pot
    8:51 Don't forget the paprika
    9:06 Boil for over an hour, stir regularly
    9:19 Remove any scum
    9:53 Blend to a smooth consistency
    10:27 Add vinegar when almost reduced
    10:36 Ladle into hot sterilised jars
    11:17 Wipe rims and add lids
    11:50 Process in a boiling water bath for 15 minutes
