the actual biggest reason is radio and coordination: You are one car, one driver, with limited info on where other officers are. But if one of them have a detailed description on you, then the whole department knows and you will, eventually, get busted.
I run on my dirtbike all the time. 3 essentials for if to run or not:
1. Wear a helmet
2. Only run if there’s a trail or sidewalk only area nearby
3. Be good at riding

when i was younger ive ran from about 6+ police officers they had dogs too, and i got away. I hid in barbed wire etc and jumped fences. But that same night i turned myself in
I mean you have to either way, that or you have to change your identity as hiding from the cops, while they will give up search at some point doesn't mean your safe like GTA claims it to be, they'd still look for you and you won't be able to go in public.
