I know you would be disappointed if my comment here wasn’t about food, so here goes: you can indeed get piccalilli in the US, and in fact a restaurant here in Nashville called The Loveless Café makes their own and sells it in jars. And PJ and Thomas recently put a recipe on their website for a hash brown casserole that is a lot like your Spanish omelette. Theirs has ground sausage and hashbrowns and cheese in a casserole dish and then covered with an egg and milk mixture before being cooked in the oven. It’s delicious!
