That nice area in the back would be a great spot for some cozy seating for coffee during the day and Happy Hour in the evenings. We have bars here in AZ called “ The Living room” which offer cozy seating for social time and they spill out onto a patio. Best wishes on your new venture.
You could always build some business on a quiet weekday evening, hold movie and dinner night for families and project a movie on the wall during dinner. Congrats!

At the moment, the bar is looking a little clinical for an English style pub but it wouldn't take a lot of time/£/effort to change it. You could make that back part feel more like a gentleman's club - deep leather sofas (second hand! Lived-in is good), smaller tables, plenty of books (some for decoration, some for reading), newspapers, board games, maybe a parlour palm or two. It should feel dark and cosy - dark green walls, large botanical print wallpaper or similar. The grey walls throughout need to go, they're very cold. The area with the tables could be lighter where people are eating but there should still be touches of gentleman's club to tie in (shelves with artefacts and other wall decorations, perhaps a reverse of the colour scheme - pale plaster pink with touches of deep green). And the area around the fire by the bar should also be dark and cosy with a couple of arm chairs to invite people in. Cosy, pub-style but modern. Just a thought!
Congratulations on your new venture. A popular thing now is to have areas with couches and chairs as conversation areas with friends when you don't want a meal but sit with drinks and maybe a snack and chat. Cozy couches and chairs with pillows and small throw plankets on wintery days.

How exciting. It is a beautiful building. Our local pub was a really nice building but the inside was old and dingy, only the locals used it. Then it got sold and the new owners had shut it for months and we worried it was going to become all modern but instead, they turned into a beautiful pub, flagstone and oak floors, vintage furniture. Now it is the most popular pub in the area.
Definitely need wood look tiles on all the floors (dark grey). Also need to use a colour similar to dulux Australia colorbond ironstone paint colour on the walls and dulux offwhite on the ceilings. Then you can use yellow as your pop of colour... maybe the front of your bar and the walls where the bench is in the garden in the bright yellow. Then the ironstone where the dark wood is on the bar in the garden. Maybe the bar benchtop too needs refinishing with the ironstone or colour matched if restaining. Do all the table and chairs in ironstone too. It's a very clever colour you have to try out and I'm sure could be colour matched. These two colours would be easy to put your (is it) red lion emblem on too. Then uniforms just need to wear black bottoms, white tops black accessories ie shoes, cardigan, aprons. Put the book case near the bar down in the reading area painted the ironstone too. Maybe upholstered chairs down their in grey and yellow pattern...tartan/check. 🤔

Congratulations! It’s a really charming space! I love the wood on the bar and the beams. The fireplace! The courtyard garden is great ! I see cafe lights strung there . My son owns a brewery and one thing I found convenient that you may want to use where you are putting the bar stools in the court yard are hooks on the walls by the bar stools for lady’s to hang their pocketbooks. Maybe some Flowers on the tables? Picked from the Chateau grounds! Wish I lived closer I would bring our whole family there! So happy for you both!
The room toward the back could be a fun games room, set for playing cards and board games! Get rid of the wall paper, make it warm and cozy with darker floors and smaller tables for 4-6 guests. No billiards or poker machines. Just a great place for guests to gather with friends. Offer fun games night packages with food and drinks for four, with snacks to enjoy during games!
Great to see the life of this pub continuing. It will be a big challenge to make it pay. I've eaten there a few times in the past. The food was fine but the ambience or lack thereof....... how to make it more appealing... get a few sofas back in by the windows for one thing

Alot of places have a back room with sofas or chairs like a lounge-type place, maybe with old movies playing with subtitles. And during the day it can be for coffees or teas and books. Maybe have a book rack where people can put some books they have read like a book exchange. I’m coming over in September so I hope to stop in and have a pint!!!

Paint the wood a light sage green or cream it will lighten the area, it will save money you won't need to change tables etc

The French have not visited it much in the past, there is a Tabac about 200m down the road that they tend to use
