I have genuinely always hated all of the roasted turkey I’ve had, and I saw this video this summer (I think). I sent it to my dad, who’s in charge of the turkey every year. This year he spatchcocked it and I had seconds and took leftovers. Thank you so much for making this video. I can actually eat protein at thanksgiving now.
Yeah, I’ve never liked turkey because my grandma cooks it dead (its soo dry and bland), though we have ham at the table as well and I wouldn’t dare try to tell her how to cook her food… if it was my mom I would suggest this vid to her.

Do people in the US not have gravy at Thanksgiving? In England, 90% of the time that we have turkey, we have gravy with it and that can save anything. If you have dry turkey, pour on some gravy (the gravy shouldn't be too thick, but definitely shouldn't be too thin) and let it soak in while you eat some veg then eat the turkey.

Cooked my first turkey when I was 25. It was actually pretty easy. Even used the juices to make a gravy for it that tasted divine! The turkey was moist, seasoned perfectly, and was overall a fun cooking experience
Yea its only hard if you cant follow instructions. Its really kinda troubling to think of how many people seem to think cooking is hard. Its not. If you actually try and are capable of following simple instructions. Be thankful that youre one of the few modern people who can follow simple instructions. We're a dying breed.

I couldn’t convince my mom to let us spatchcock the Turkey last year, but over this past year I’ve spatchcocked multiple chicken to show her the benefits of it and now we’re doing it this year.
Two years later and I’m hoping they kept to the data that they found and did a spatchcock this year and didn’t just go back to tradition because trying something new can make your life so much better.

Having deep fried turkey is also amazing. Smoked turkey is good. Having a turkey that is smoked for 3/4 of the cooking and finished in the deep fryer was probably the best turkey I've ever had. The only time that my family ever went to get another turkey to cook.
Honestly haven't had an oven baked turkey in over 15 years, but I'm interested in trying this out, now.

I'm glad this popped up on my RUclips before Thanksgiving this year of 2021 I'm gonna try it out. I have only cooked a turkey once and though it wasn't terrible I hated the whole let's cook this bird for 3-5 hours. 2.5 hours is definitely much better and just makes getting the whole meal done so quicker.

I love how MatPat just rambles for ages about how important and difficult the turkey is, because in my family, it's a goddamn title to be able to cook the turkey (one my mom holds very proudly). Actually, I was born the day before Thanksgiving, so while my mom was in the hospital with a newborn, the rest of the nearly 25 people we had for Thanksgiving that year were scrambling to figure out who could actually cook (since my mom does the stuffing, turkey, gravy, and cranberry sauce. This woman knows her Thanksgiving).

For next year, perhaps try wrapping the turkey in aluminum foil as that's what my family has been doing for years, and it allows for the picturesque turkey presentation while being much faster at 2 hours so I'd consider it as a medium option between straight roasting it, and and butterflying the bird

Every since this one aired. We do our turkeys this way. And we usually have a turkey for Thanksgiving and Christmas dinner. It's the best!
I did a literal first pump when you said spatchcock. I've been doing it for over 7 years for Christmas and Thanksgiving both at home and at work. Nothing can match that crispy skin. I always do compound butter under the skin and make sure you tuck the wing tips so the don't burn. Also the neck and spine are great to use for turkey stock.

I do agree with you on this one, my mom and I would wake up at the crack of dawn just so we could cook the turkey first before we did anything else for Thanksgiving, Christmas, and another holiday that we cook whole turkey for some reason. My mom and I actually put our turkey inside of a turkey bag so that it can become more juicy and collect the rest of it for the gravy that goes with it.

This is the only way to cook a bird from now on. Cooked my Thanksgiving turkey like this this year and just cooked two cornish hens for Christmas dinner with this method. Video changed my life. Thanks man.

I made my very first turkey this year, I'm 36 so I figured it's finally time to adult the f up. I was curious to see if I should have done it differently- and was DELIGHTED to see that y'all did it the way I decided to do it! Mom and I both made turkeys together this year and she was so angry that mine was better, LOL

I had just as hard of a time cutting the spine out when I did it, but it was better for us as well. I do find that a roaster does better than the oven and goes quicker with or without spatchcocking it.

I remember my overwhelming skepticism at the thought of oven bags ("clearly" a preposterous idea, compared to basting)... and my absolute conversion instantly after my first use of one. I wonder how those would help/hinder a spatchcocked bird.

Speaking of Ramsey, watch his holiday turkey video to learn the RIGHT way to cook a traditional turkey. There is no comparison. I've made it 5 times and about to do it again. It's way easier than how these two did it as well. I dunno why they made a video about how difficult making a turkey is, cause it really isn't.

I have a twin wall oven setup. The ovens are each smaller than a range type oven, but you can cook things at different temperatures at the same time. Or for Thanksgiving, you can cook side dishes in one oven while the turkey cooks in the other. The double wall oven isn’t very expensive. We only use the one oven most of the year. Nice to have the oven at eye level too.

Next year: deep-fried turkey v. Spatchcocked turkey
sous-vide is by far the best preparation. separate the turkey into all its pieces raw. cook for 4 hrs in a water bath (not active). put the pieces on a cooling rack in the fridge (this can be cooked in advance). deep fry to reheat and crisp skin at dinner time. Being able to cook the turkey the day before or in the morning when you arent having to do other things is really nice.

My family often has a prime rib for Christmas and prime rib trumps turkey IMO. I still really enjoy Thanksgiving though. As for spatchcocking the turkey, thanks for the tip. Stuffing/dressing is one of my favorite parts, but you can make it separate and outside the bird
I use to work in Nando’s and we would spatchcock our chickens when cooking them in the ovens.

Dry brine the day before (salt and sugar rubbed on the skin). Day of stuff with onions and apples (lots of moisture which keeps it moist from inside), mayo on the skin (traps moisture and gets brown). Lots of herbs and chicken stock in the bottom of the pan for gravy and moisture. The Flavors by Ale recipe is amazing!
